KUVALE POTATO MANDAE SASSAM [konkani recipe]/ Ashgourd, Potato, Colocasia Coconut Mustard Masala Gravy.

Ash gourd is called Kuvale in Konkani. Sassam  means Mustard in Konkani.Colocasia root/ Arbi is called Mandae in Konkani.This Konkani dish is a very delicious and tasty raw Mustard based Ash gourd  gravy

 The following ingredients are needed to prepare this delicious recipe.

Ingredients:-

Potato.                      -1 medium size
Colocasia (Mandae) -5
Ash gourd.                -2cup chipped
Salt.                           -to taste

Coconut oil.                -1tbsp
Curry leaves.              -1spring

For grinding the Masala paste:-

Coconut grated. -1 cup
Green chilly.       -4
Mustard seeds.   -1tsp

Instructions:-

Wash, peel the skin and chop  Potato into big square pieces.

Peel and remove the skin and chop 5 Colocasia into big  square pieces.Wash them and keep aside.

Chop and remove the outer skin ,wash and chop the Ash gourd into big square pieces--1 cup. Keep aside.

Grind 1cup grated Coconut,4 Green chillies and 1tsp crushed Mustard seeds to a fine paste.Keep aside.

Method:-

In a cooking vessel boil required amount of water and add Potato pieces, Colocasia pieces and Ash gourd pieces and cook till the veggies cooked well and soft.

Add required Salt and mix well.

Add the ground Coconut Masala paste.Mix well and boil for 2 minutes.

Add fresh Curry leaves and Pour 1tbsp Coconut oil over the Curry.

A tasty  Kuvale,Potato Mandae Sassam is ready to serve with Rice and other side dishes.
