Kale moong dal thoran also known as kale thoran / kale moong dal coconut thoran / kale coconut thoran is healthy and easy to prepare kale coconut stir fry with lentil made with kale leaves, split yellow moong dal, grated coconut and spices. Kale moong dal thoran goes well as a side dish with rice. Kale also called "Leaf Cabbage" is a green leafy vegetable belongs to the cabbage family.
The following ingredients are needed to prepare Kale Thoran / Kale Moong dal Thoran / Kale Moong dal Coconut Stir Fry
Ingredients:-
Kale leaves. -4 stems with leaves.
Moong dal. -1/2 cup
Green chilly. -2
Turmeric powder.-1/4 tsp
Asafoetida. -1/2 tsp
Grated coconut. -1/2 cup
Cumin seeds. -1tsp
Mustard seeds. -1tsp
Water. -2 cup
Salt. -to taste
Oil. -2 tsp
Instructions:-
1). Wash and soak split yellow moong dal in water for 2 hours.
2). Separate the leaves and stems of kale and discard the stems. Wash and finely chop the kale leaves. Drain and keep aside.
Method:-
1). Heat 2 tsp oil in a wide bottom pan and splutter mustard seeds and cumin seeds. Add slit green chilly and asafoetida into the pan and mix well.
2). Add soaked moong dal into the pan and mix well. Add turmeric powder, required salt and 2 cups of water into the pan. Cover and cook moong dal till soft.
3). Once the moong dal is cooked well and the water is drained add finely chopped kale leaves into the pan and mix well.
4). Once the finely chopped kale leaves are cooked well add grated coconut into the pan and mix everything and switch off the flame.
Kale Moong Dal Thoran / Kale Thoran / Kale Moong Dal Coconut Stir Fry is ready to serve as a side dish with rice.
