Potato Chunda Phal Upkari is a Kochi Konkani style stir fry of Potato and Turkey berry.Potato and Turkey berry are good combination just like Papaya and Turkey berry.We can prepare varieties of dishes using Turkey berry.
The following ingredients are needed to prepare POTATO CHUNDA PHAL UPKARI.
Ingredients:-
Potato. -1 medium size
Turkey berry. - 1 cup
Coconut oil /Oil. - 2tsp
Mustard seeds. -1/2 tsp
Dry Red chilly powder. -1tsp
Salt. -to taste
Instructions:-
Remove the outer skin,wash and chop Potato into small square pieces.
In a vessel boil the Potato pieces adding Water and little Salt and cook till soft .Or Pressure cook the chopped Potato pieces adding little water and Salt till soft and well cooked and keep aside.
Wash and chop each Turkey berries into two pieces and put them in Water in a bowl.
Method:-
Heat Oil in a pan and splutter Mustard seeds.
Lower the flame and add dry Red chilly powder and saute well for a second.
Add the boiled and cooked Potato pieces and saute well.
Discard the Water from the bowl and add the chopped Turkey berries and saute well.
Check Salt and add if needed.
Cover the Pan with a lid and cook for 2 minutes or till the Turkey berry cooked and mix with the cooked Potato pieces.Stir in between and switch of the flame.
A tasty, yummy Potato Chunda Phal Upkari is ready to serve with hot steaming rice.Try and enjoy.
