VEG KURMA / VEGETABLE KORMA

Veg Kurma/ Korma is a Curry made using vegetables along with Coconut,Cashews and Spices.In Kerala Vegetable Koorma is served with puri, Chapathi, Aappam, Idiyappam etc.The Veg Kurma recipe is very simple,quick and easy to prepare.

The following ingredients are needed to prepare Veg Kurma recipe.

Ingredients:-



Potato.                          -1 big size
Carrot.                          -1 medium size
Beetroot.                      -1 big size
Green peas(frozen).    -1/2 cup
Onion.                         -1 medium size
Tomato.                       -1 big size
Turmeric powder.        -1/4tsp
Coconut grated           -1 cup
Cashew nuts.              -8 [optional]
Ginger.                        -1tbsp chopped
Garlic.                         -1tsp chopped
Green chilly.                -4
Cinnamon.                  -1inch stick
Clove                          -3
Pepper corn.               -6
Fennel seeds(Saunf). -1/4tsp
Water.                         -1 cup
Salt                             -to taste
Coconut oil/Oil.           -2tbsp
Mustard seeds.           -1/2tsp
Curry leaves.              -1spring
Coriander leaves.       -few chopped



Instructions:-


Peel the outer skin, wash and finely chop Ginger.Keep aside.


Finely chop Garlic flakes and keep aside.


Wash and slit Green Chillies lengthwise and keep aside.


Grind together the chopped Ginger, chopped Garlic ,slit Green Chillies, Cinnamon stick ,Cloves, Pepper corn and Fennel seeds(Saunf) to a smooth paste.Keep aside.

Soak 8 Cashew nuts in hot Water for 10 minutes.Then drain the Water.Keep aside.

Grind together 1cup grated Coconut and 8 soaked and drained Cashewnuts to a smooth paste. Keep aside.

Finely chop Onion and keep aside.

Finely chop Tomato and keep aside.

Finely chop Coriander leaves. Keep aside.

Peel,wash and chop Potato,Carrot and Beetroot into small cubes.Keep aside.



Method:-


Heat Coconut Oil/ Oil in a wide Pan and splutter Mustard seeds and add Curry leaves and saute well for a second.

Add finely chopped Onion and saute well till the Onion become translucent.

Add the ground paste of Ginger Garlic Green chilly and spices and saute for few minutes until the raw smell goes off. Sprinkle 2tbsp of Water and saute well to bring the masala together and boil for 2 minutes.

Add finely chopped Tomato pieces and saute well till Tomato become soft.


Add required Salt and mix well.

Add chopped Potato,Carrot and Beetroot cubes and saute well.

Add Turmeric powder and 1cup of Water.

Add frozen Green peas.Mix well and bring to boil on low flame.

Cover the pan with a lid and cook for 15 minutes or till the vegetables become soft and well cooked.

When the Vegetables become soft and cooked well add the Coconut Cahew paste and ix well.

Cover and cook for 5 minutes on low flame.

Switch off the flame and remove the Curry from flame.

Add the chopped Coriander leaves and mix well.

Let the Curry rest for 20 minutes.Curry tends to thicken a little as it rests.

A yummy hot Veg Kurma/ VegitableKorma is ready to serve.


Serve hot Vegetable Korma/Kurma with Chapathi, Poori, Idiyappam,Aappam etc.
