Udida Appo is a traditional Konkani breakfast dish made with Urad dal and Rice and served with Chutney or Pickle or Sambar.
Ingredients:-
White whole Urad dal. -1cup
Methi seeds. -1/2tsp
Idli Rice. -1cup
Dosa Rice. - 3cup
Poha. - 1/4 cup( optional)
Salt. - to taste

Instructions:-
Wash and soak 1cup Idli Rice in water for 4 hours.
Wash and soak 3cup Dosa Rice in water for 4 hours.
Wash and soak 1cup White whole Urad dal and 1/2tsp Methi seeds( Fenugreek) together in water for 2 hours just before grinding.
Wash and soak 1/4 cup thick Poha in little water for 2 hours just before grinding.
Drain the soaked Water and grind the soaked Urad dal and soaked Methi seeds together to a fine paste adding very little Water and transfer the ground batter to a large vessel.
Drain the soaked Water and grind the soaked Idli Rice to a smooth batter and transfer the batter to the same large vessel.
Grind the soaked Dosa rice first and then add the soaked Poha and grind together to a fine batter and transfer to the same large vessel.
Add Salt and mix well all the ground batter in the large vessel together. Keep aside to ferment for 12 hours.
Method:-
Heat a Appo tawa on high flame and add 1tsp oil on each depression in the appo tawa.
Take a ladle of batter and pour 3/4 on each depression and close the appo tawa with a lid.Cook on medium low flame for 3 to 4 minutes.
When the bottom side is cooked remove the lid and slowly edge out/ flip over the appo from each depression with a knife edge or with a spoon ( do not over cook the appo, it will become dark on the bottom) and flip over the appo in the depression to cook the upper side.
Remove the cooked appos from the appo tawa and transfer to a plate .
Soft and well cooked Udida Appo is ready to serve.
Serve Udida Appo hot with Chutney or Sambar or with Pickle as a breakfast or dinner with a cup of hot Coffee or Tea.
