Karathe Nonche (Bitter Gourd Pickle) Konkani Recipe.


Karathe Nonche is a Konkani style instant Bitter gourd Pickle and goes well as a delicious side dish with dosa, idli, thayir sadam, rice and appam. Bitter gourd is called Karathe in Konkani. Karathe Nonche /Bitter gourd Pickle recipe is with step by step pictures.

The following ingredients are needed to prepare Karathe Nonche / Bitter gourd Pickle. Ingredients:

White Bitter gourd. -1medium size
 Salt.                         -to taste
 
For grinding the Chilly Paste:
Dry red chillies.- 8
Methi seeds.      -1/4 tsp (fenugreek seeds)
Hing powder.    -1/2 tsp (asafoetida)
Tamarind.          -a gooseberry size.

For Seasoning:
Coconut oil.     -1tsp
Mustard seeds. -1tsp
Curry leaves.    -1sprig

Method:
1). Wash white bitter gourd / karathe and pat dry with a clean cloth.Cut the bitter gourd lengthwise and remove the seeds.Then chop it into thin and small lengthwise pieces.

2). Apply little salt on the chopped bitter gourd pieces and keep aside for 1/2 an hour to rest. Then squeeze the bitter gourd pieces to remove the water completely from it. Deep fry the squeezed bitter gourd pieces in hot oil till crisp and keep aside.

 

 

3). Soak a gooseberry size tamarind in little boiled and cooled water and keep aside.

Heat little oil in a pan and roast dry red chillies till crispy and remove from oil and keep aside. In the same pan add methi seeds /(fenugreek seeds) and fry in oil and remove the methi seeds from oil and keep aside. In a mixer add the roasted red chillies and methi seeds and grind them along with required salt, soaked tamarind, hing powder (asafoetida) and little boiled and cooled water to a fine chilly paste.Transfer the ground chilly paste in a bowl and make it dilute, adding little boiled and cooled water and keep aside.
   
4). Add the fried crispy bitter gourd pieces into the bowl and mix well with the chilly paste in the bowl.

5). Heat coconut oil in a small pan for seasoning and splutter mustatd seeds. Add curry leaves into the pan and fry in oil.
Switch off the flame and pour the seasoning into the fried bitter gourd chilly paste mixture in the bowl.

5). Once cooled to room temperature cover the bowl with a lid and keep the instant bitter gourd pickle in the refrigerator and it stays good for few more days.A tasty, lip smacking and mouth watering instant Karathe Nonche / Bitter gourd Pickle is ready to serve with dosa, idli, appam and rice.
