Udid Methi is a sweet sour and spicy Raw Mango Potato Curry adding Coconut, Jaggery and other spices.
The following ingredients are needed to prepare Udid Methi (Raw Mango Potato spicy Curry)
Ingredients:-
Raw Mango. -1
Potato. -1
Green chilly. -1
Turmeric powder. -1/4 tsp
Jaggery crushed. -2 tbsp
Salt. -to taste
For grinding Coconut Masala paste:-
Urad dal. -1tsp
Methi seeds. -1/2 tsp
Red chillies. -5
Pepper. -2 corns
Coconut grating. -1 cup
For Seasoning:-
Coconut oil. -2 tsp
Mustard seeds. -1/2 tsp
Curry leaves. -1spring
Hing powder. -1/2 tsp
Instructions:-
Wash, peel and chop Raw Mango into thick lengthy slices and keep aside.
Peel and chop Potato into thick lengthy slices and keep aside.
Wash and half slit Green Chilly and keep aside.
Heat 1tsp oil in a pan on medium flame and roast Red Chillies till crisp and remove to a plate.In the same pan add Urad dal, Methi seeds and Pepper corns and roast till aroma comes out and switch off the flame. Allow the roasted ingredients to cool.
Grind the roasted ingredients with grated Coconut and Turmeric power adding little water to a smooth paste and keep aside.
Method :-
In a cooking vessel boil 1cup of Water and add Potato pieces, Mango pieces, half slit Green chilly, Turmeric powder and cook till Potato and Mango pieces become soft on low flame.
Add the ground Masala paste and mix well.
Add required Salt, crushed Jaggery and mix well.Add Water to make a desired consistency but not watery and boil for 2 minutes on medium flame.
Adjut Salt and Jaggery according to the sourness of the raw Mango slices. Boil well and switch off the flame.
A very tasty, sweet, sour and salty Raw Mango Potato spicy Curry/ Udid Methi is ready to serve with Rice, Roti or Chapathis.
