KUVALE PULI KODDEL /Ash gourd in Spicy,Tangy, Sweet Coconut Gravy.


Ash gourd is called  Kuvale in Konkani.Puli Koddel is a Coconut based Curry adding Ash gourd.It is normally served during Konkani festivals and special religious functions in Mangalore side Konkani people.It does not have Onion and Garlic.Puli means tangy and Koddel means coconut based  gravy.Ash gourd is one of the healthiest vegetable you can use in various veg Curries.Ash gourd is loaded with nutrients and full of Vitamins, Minerals and Calcium.Making Puli koddel adding Ash gourd is a very easy recipe.The combination of Ash gourd in this Sweet,Sour and Spicy Curry is heavenly.

The following ingredients are needed to prepare Kuvale Puli Koddel.


Ingredients:-

Ash gourd.              - 2 cup chopped

Salt.                          -as per taste

For grinding the Coconut Masala Paste:-


Urad dal.                 -1tsp
Chana dal.              -1tsp
Coriender seeds.   -1tbsp
Cumin seeds.         -1/2tsp
Red chilly.               - 5
Sesame seeds.        -1/2 tsp
Coconut grated      -3tbsp
Turmeric powder. -1/4tsp
Tamarind.               -a small gooseberry size.
Jaggery.                   -1/2 cup[crushed]


For seasoning :-


Coconut Oil.      -1tsp
Mustard seeds. -1/2tsp
Curry leaves.     -1spring


Insructions:-

Peel the outer skin,remove the seeds,wash and chop Ash gourd into 1/2 inch lengthy pieces.Keep aside.

Roast Urad dal, Chana dal, Coriander seeds, Cumin seeds, dry Red chilly, Sesame seeds and grated Coconut in little Coconut oil.
Allow the roasted ingredients to cool. Then add 1/4 tsp Turmeric powder and mix with all the roasted ingredients.

Grind the roasted ingredients along with soaked Tamarind and crushed jaggery to a little coarse paste.Keep aside the ground coconut masala paste.


Method:-

Boil 1 cup  of water in a cooking vessel and add the chopped Ash gourd pieces.Cover the vessel with a lid and cook the Ash gourd pieces till soft and well cooked.

Add required Salt and mix well. Boil and cook for 2 minutes.


Add the ground Coconut masala paste and boil for 5 minutes.Switch off the flame.

Heat 1tsp Coconut oil in a pan on low flame  for sesoning.Splutter Mustard seeds and fry the Curry leaves. Switch off the flame.


Add the above seasoning into the Curry in the cooking vessel. 


A tasty and yummy KUVALE  PULI KODDEL is ready to serve with Rice.
