Home Made Dinner Rolls


Soft and tasty home made dinner roll buns can be served with jam or butter along with hot tea or can be served as a burger bun. Dinner Rolls recipe is explained with step by step method and photos.

The following ingredients are needed to prepare Home Made Dinner Rolls.

Ingredients:-

All purpose flour.-1 and 3/4 cup
Egg.                     -1
Butter.                  -2tbsp
Salt.                      -1/2tsp
Sugar.                   -2tbsp + 1tbsp
Yeast.                    -1tbsp
Luke warm water. - 1/3 cup

Instructions:-

In a small glass add 1tbsp of sugar, yeast and water. Mix well and keep it aside until the yeast is fermented.

Method:-

1). In a wide mixing bowl add all purpose flour, beaten egg, butter, 2tbsp sugar, salt and fermented yeast mixture. Mix all the ingredients together to form a sticky dough using your hands. Sprinkle some flour on the kitchen surface and transfer the sticky dough on it and knead well for 10 to15 minutes until it becomes a soft dough. Do not add any extra flour.Transfer the soft  and sticky dough into a greased mixing bowl.


2). Cover the soft dough with a wet cloth.

3). Rest the dough in a warm area for 2 hours or until the dough doubled in size.

4). Punch down the risen dough and divide the dough into 9 portion.Roll and tuck in to form a round shape. Place the rolled dough in a greased baking tray.


5). Rest the rolled dough to rise for 1 hour or until  the rolls doubled in size.

6). Brush beaten egg on top of each risen dough roll.



7). Pre heat the oven to 200 degree C.

8). Sprinkle some white sesame seeds on the dough rolls and bake the rolls in the pre-heated oven. 



9). Bake the rolls for 25 minutes or until the crust is slightly browned.

10). Remove the tray from oven and brush the baked rolls with little melted butter on top and let it cool.



11). Once cooled completely cut the rolls along the edges using a piza cutter.


12). Transfer dinner roll buns in a serving bowl.

Soya Chunks Kebab


Soya Chunks Kebab is a delicious evening snack that can be served with tomato ketchup or can be served as patties with bun.Soya Chunks Kebab recipe is explained with step by step method and photos.

The following ingredients are needed to prepare Soya Chunks Kebab.

Ingredients:-

Soya Chunks.     - 1/2 cup
Green chilly.       -2
Garlic.                 - 4
Capsicum.           -2 tbsp chopped
Cabbage.             -2 tbsp chopped
Onion.                  -1 finely chopped
Coriander leaves. -1 tbsp finely chopped
Maida.                  -2tbsp
Cumin seeds.        -1tsp
Turmeric powder. -1/4tsp
Chilly powder.      -1/2tsp
Garam masala.      -1 and 1/2 tsp
Salt.                       - to taste
Oil.                        - for shallow frying

Instructions:-

1). In a vessel boil sufficient water and add soya chunks into the boiling water. Switch off the flame and keep the chunks in boiling water for 10 minutes.Drain the boiled water and squeeze the soya chunks and remove the water completely and keep aside.


2). Grind chopped green chiilies, garlic, cumin seeds and squeezed soya chunks to a coarse mixture.


3). In a mixing bowl add chopped onion, chopped capsicum and chopped cabbage.


4). Add the coarsely ground mixture into the mixing bowl.


5). Add turmeric powder, red chilly powder and garam masala powder into the mixing bowl.

6). Add required salt into the mixing bowl.

7). Add finely chopped coriander leaves into the mixing bowl.

8). Mix together all the ingredients in the mixing bowl using your hands.

9). Add maida (all purpose flour) into the mixing bowl.

10). Combine all the ingredients together.Take a small portion of the mixture and make it a small ball shape and gently pat on it and flatten it.Make similar patties with the remaining mixture and transfer to a plate and refrigerate it for 10 minutes.

11). Heat oil in a pan on high flame for shallow frying.

12). When the oil is hot lower the flame to medium heat and drop the kebabs in hot oil. Shallow fry them in batches until golden brown on both sides.

13). When done remove from hot oil and transfer to a serving plate.

14). Soya Chunks Kebab is ready to serve as patties with home made buns or with tomato ketchup.

Godi Surnali / Sweet and Spongy Surnali Dosa (Konkani Recipe)


Surnali /Sweet Surnali Dosa / Godi Surnali is a traditional GSB Konkani style sweet and spongy pancake made with raw rice, beaten rice and fenugreek seeds soaked in curd adding jaggery and coconut. Surnali is a popular breakfast dish in Konkani communities during Tulsi pooja day. Godi Surnali recipe is explained with step by step method and photos.

The following ingredients are needed to prepare Godi Surnali / Sweet and spongy Surnali Dosa.

Ingredients:-

Raw Rice.             - 2 cup
Beaten rice.          -1 cup (thick poha)
Fenugreek seeds.  -1/2 tsp (methi seeds)
Curd.                    -1 and 1/2 cup
Water.                   -1 and 1/2 cup
Grated coconut.    -1 and 1/2 cup
Jaggery grated.     -1/2 cup or 3/4 cup
Turmeric powder. -1/4tsp
Cardamom.           - 4 or 5
Salt.                       -1tsp
Ghee.                     -2tbsp

Instructions:-

1). In a vessel soak raw rice, beaten rice (thick poha) and fenugreek seeds (methi seeds) in 1 and 1/2 cup of curd. Add 1and 1/2 cup of water into the vessel and soak all the ingredients together for 5 hours.


2). Grind the soaked rice, poha, methi seeds and soaked curd and water along with grated coconut jaggery, turmeric powder and peeled cadamom to a smooth and thick batter of pouring consistency.


3). Transfer the ground batter to a vessel. Add salt into the batter and mix well. Keep aside the ground batter to ferment for 8 to 12 hours.

Method:-

1). Heat a non stick dosa tawa on medium heat and apply little ghee on hot tawa. Mix the fermented batter with a ladle and take a ladle of batter.

2). Pour the batter on hot tawa and do not spread the batter using back of the ladle. Just turn the tawa in a circular motion to spread the batter on tawa by itself and to get a round shape thick dosa.

3). Cover the dosa with a lid and cook on one side of the dosa on medium low flame.

4). Open the lid and spread little ghee around the sides and on the dosa. 


5). Small holes will appear on the dosa. Cook well till base of the dosa becomes golden brown colour. No need to flip the dosa. 


6). Remove the well roasted soft dosa from hot tawa with a flat spatula to a plate.

7). Make sweet surnali dosas with the remaining batter and transfer to a serving plate. Godi Surnali /Sweet and Spongy Surnali Dosa is ready to serve hot with butter.

Tomato Dosa


Tomato Dosa is a tasty and easy to make instant breakfast dish that can be served with coconut chutney. Tomato Dosa recipe is explained with step by step method and photos.

The following are needed to prepare Tomato Dosa.

Ingredients:-

Dosa Rice.           - 2 cup
Ripe Tomato.      - 4
Onion.                 - 2
Dry Red chillies. - 4
Ginger.                 - small piece
Cumin seeds.       -1tsp
Coriander leaves. - few
Salt.                      - to taste
Oil.                       - for roasting.

Instructions:-

1). Soak dosa rice in water for 4 hours.


2). Peel wash and finely chop onion and keep aside.

3). Wash and finely chop ripe tomatoes and keep aside.

4). Peel and chop ginger into small pieces and keep aside.

5). Wash and finely chop coriander leaves and keep aside.


Method:-

1). Drain water and grind the soaked dosa rice along with finely chopped onion, tomatoes, ginger, coriander leaves, cumin seeds, dry red chillies and required salt to a fine and thick paste adding very little water.


2). Transfer the ground batter to a vessel. Add few finely chopped onion into the batter and mix well.

3). Mix the batter well. Add little more water into the ground batter and make a thin batter of free flowing consistency.Tomato dosa batter is ready to make dosa and no need to ferment the batter.


4). Heat a non stick dosa tawa and grease with little oil.


5). Mix the batter with a ladle and pour the thin dosa batter on hot tawa in a circular motion starting from the edges of tawa and move towards the center till the batter fills the center portion.Pour little oil around the edges and over the dosa.(Do not spread the batter with the back of the ladle.)


6). Cover the dosa with a lid and cook on medium flame.


7). Open the lid when base of the dosa becomes crispy.Do not flip the dosa.


7). Fold the well roasted dosa to one side with a flat spatula.


8). Transfer the crispy tomato dosa to a serving plate.


9). Repeat the above process and make crispy tomato dosas with the remaining batter. You can refrigerate the remaining dosa batter.

 Serve the tasty Tomato Dosa hot with coconut chutney.
