Ash gourd is called Kuvale in Konkani.Ambat means Coconut and Curd based gravy.
Kuvale Ambat is a traditional and very Popular Coconut and Curd based Gravy.Kuvale Ambat is a non-spicy and very tasty Kochi GSB Konkani style recipe.
The following ingredients are needed to prepare Kuvale Ambat.
Ingredients:-
Ash gourd. -2 cup chopped
Colocasia. (avla mande) -4
Salt. -to taste
Curd - 2 cup
For grinding Coconut Masala paste:-
Coconut grated. -1cup
Dry Red chilly. -2
For Seasoning:-
Coconut oil. - 1 tsp
Mustard seeds. -1/2tsp
Cumin seeds. - 1/2tsp
Curry leaves. -1 spring
Dry red chilly. -1 [optional]
Instructions:-
Peel the outer skin,wash and chop the Ash gourd into 1 inch cubes.Keep aside.
Peel the outer skin of Colocasia (Avla Mande) and chop into1inch lengthy pieces. Wash well and keep aside.
Whisk the Curd adding water and keep aside.
Grind grated Coconut and dry Red chillies to a fine paste adding very little water.Keep aside the ground coconut masala paste.
Method:-
In a cooking vessel add the chopped Ash gourd pieces and chopped Colocasia pieces.Add enough water to cook the chopped pieces.
Add required Salt and mix well.Boil and cook until the Ash gourd and Colocasia pieces become soft but not mushy.
Add the ground Coconut Masala paste to the boiled Ash gourd and Colocasia pieces.Mix it nicely and bring it to a boil and switch off the flame.
When the gravy is little cooled add the whisked Curd and mix well.The gravy should be medium thick. Adjust the consistency by adding required amount of whisked curd.
Heat Coconut oil in a pan on low flame for seasoning.Splutter Mustard seeds and Cumin seeds and saute well. Add dry Red chillies broken into 2 pieces and fry for a second.Add Curry leaves and saute well.Switch off the flame.
Pour the above seasoning into the gravy in the cooking vessel.
A very tasty and yummy Kuvale Ambat is ready to serve with hot rice.
