Ingredients:-
Green long Brinjal.-3
Salt. -to taste
Chilly powder. -1tsp
Turmeric powder. -1/4 tsp
Coriander powder. -2 tsp
Hing powder. -1/4 tsp
Instructions:-
Wash and chop the long Green Brinjals into thin lengthy pieces. Keep them in Water to prevent it from getting dark.
In a mixing bowl add Chilly powder, Turmeric powder, Coriander powder and Hing powder. Add 2 tbsp Water and mix all the powders together and make a paste.Keep aside
Drain Water and apply little Salt on the choppedLon Green Brinjal pieces and then add the Brinjal pieces into the mixing bowl and mix with the spice powder paste till the spicy paste coated well with the Brinjal pieces and keep them for 2 minutes
Method:-
Heat Oil in a pan and add Urad dal and saute well.
When Urad dal starts to change its colour splutter Mustard seeds.
Add the masala paste coated green Brinjal pieces and stir well.
Add little Water.Cover the pan and cook the Green Brinjal pieces till soft on low flame and stir in between.
When the Brinjal pieces cooked well switch off the flame.
A tasty and delicious Konkani style Long Green Brinjal stir fry Green Brinjal Upkeri is ready to serve as a side dish with Rice.
