Yam Pepper Stir -fry is a tasty and delicious side dish goes well with Rice. The following ingredients are needed for preparing Yam Pepper Stir-fry.
Ingredients:-
Elephant Yam. -250 gm
Black Pepper. -2tsp
Shallots. -25
Garlic cloves. - 5
Coconut bits. - 1/4 cup
Turmeric powder. - a pinch
Garam Masala. -1 /2 tsp
Salt. -to taste
For Seasoning:-
Coconut oil/ Oil. -2tsp
Mustard seeds. -1/2 tsp
Dry Red chillies. -2
Curry leaves. -1spring
Instructions:-
Peel the outer skin and chop the Yam into 1 inch pieces. Wash well in water and keep aside.
Crush the Black Pepper and keep aside.
Peel and wash Shalots.Crush it slightly and keep aside.
Peel and crush the Garlic slightly and keep aside.
Method:-
In a cooking vessel add the chopped Yam pieces.Add a pinch of Turmeric powder, Salt and enough Water just to immerse the Yam pieces.Boil and cook on medium flame till soft but firm.
Heat oil in a pan and splutter Mustard seeds and saute well.
Add dry Red Chillies broken into halves and fry in oil .
Add Curry leaves and saute well.
Add Coconut bits and fry in oil.
Add the crushed Garlic and Shallots and nd fry well.
Add crushed Pepper and Garam Masala powder and mix well.
Add cooked Yam pieces and mix well and cover and cook for 3 minutes.
Check Salt and add if needed and mix well.Switch off the flame.
