Home Made Idli Dosa Batter.


We can make varities of south Indian breakfast dishes with the Home made Idli Dosa Batter. The same Batter can be used for making super soft  Idlis, sada Dosa, Set Dosa, Crispy Dosa, Uttappam, Masala Dosa, Ghee Roast, Sandan (steamed Rice Cake), Rice Appe (Paniyaram) etc.

The following ingredients are needed to prepare home made Idli Dosa Batter.

Ingredients:-

Whole white Urad dal. -1cup
Fenugreek seeds.        -1tbsp
Idli Rice.                       - 4 cup
Salt.                              -2tbsp
Water.                           - as required.

Instructions:-

Wash and soak whole white Urad dal along with Fenugreek seeds [Methi seeds] in water for 3 hours just before grinding.

Wash and soak Idli Rice in water for 5 hours.

Drain the water and grind the soaked Urad dal and soaked Fenugreek seeds together to a smooth, thick and fluffy batter adding  soaked Water little by little.The batter should be thick.Remove the batter and transfer to a large vessel.

The vessel should be large enough as the batter will swells in volume when it ferments.

Drain water and grind the soaked Idli Rice to a smooth paste adding 1/4 cup of Water.Remove the batter and transfer to the same large vessel.

Mix both the batters in the large vessel together with your hands for 2 minutes.

Add 2tbsp Salt and mix the batter again.

Keep the large vessel with the batter in a warm place to ferment the batter.

The batter in the large vessel will take 8 to 12 hours to ferment.

Mix the fermented batter with a laddle.


Now the home made Idli Dosa batter is ready to make Idli or Dosa according to your choice.



Idli Dosa Batter.


Method:-

For making Soft Idlis :-

Transfer the required amount of batter from the large vessel in a bowl to make Idlis.Then keep the large vessel with the left over batter in the refrigerator.

Grease the Idli plates with little oil.

Mix the batter with a laddle.Take a laddle of batter and pour into each greesed Idli plate/ Idli mould .

Place the Idli plate/ Idli mould on the Idli stand. Keep the Idli stand into the steamer. and steam cook for 12 minutes.

When done remove the Idli plate/ Idli mould from the steamer and allow the steamed Idlis to cool.

Demould the Idlis from the Idli plate / Idli mould using the edge of a spoon and transfer to a serving plate.

Super soft Idlis are ready to serve hot with Sambar or Chutney.




For making  Soft Dosa:-

Mix the fermented batter in the large vessel with a laddle.

Transfer the required amount of batter from the large vessel in a bowl to make Dosa.


Keep the large vessel with the left over batter in the refrigerator for further use.

If the batter in the bowl is too thick, you can adjust by adding water according to the Dosa consistency of the batter and mix well with the laddle.

Heat a dosa tawa on medium heat.Apply little oil on the tawa.

Take a laddle full of batter and pour the batter in the centre of the tawa and spread the batter to make  soft Dosa.

When the base of the Dosa is cooked add little oil on the sides of the Dosa and flip with a flat spatula to cook the other side .

Flip again and remove the cooked and roasted Dosa from tawa and transfer to a serving plate.

Super Soft Dosa is ready to serve hot with Sambar or Chutney.
