Karathya Dhave Humman

Bitter Gourd is called Karathe in Konkani.Karathya Dhave Humman is a mixed vegetable curry adding White Bitter gourd, Carrot, Yam, Long Yard beans and cooked with ground Coconut Paste.Seasoning of Mustard seeds, Cumin seeds and Curry leaves in Coconut oil makes the Curry more tasty and delicious and goes well with rice.

The following ingredients are needed to prepare the Karathya Dhave Humman.

Ingredients:-

White Bitter gourd. -1 medium size
Potato.                      -1 medium size
Carrot.                      -1medium size
Yam.                         - a small piece.[optional]
Long Yard Beans.     - 5
Green chillies.          - 8
Grated Coconut.     -1cup
Hog plum.               -2 medium size or Star fruit.-2
Hing powder.          -1tsp
Salt.                         - to taste

For Seasoning:-

Coconut oil.     -1tsp
Mustard seeds. -1tsp
Cumin seeds.    - 1/2tsp
Curry leaves.     -1spring

Instructions:-

Chop the White Bitter gourd length wise. Remove the seeds,wash well in water and chop into 1inch lengthy medium thin pieces and keep aside

Chop and remove the outer skin and clean a small Yam piece. Chop into 1inch lengthy thin pieces.Wash the chopped Yam pieces thoroughly 2/3 times in water and keep aside.

Remove the outer skin and chop the Potato into 1 inch lengthy medim thin pieces. Wash and keep aside.

Wash and chop Long Yard Beans into 1/2 inch lengthy pieces and keep aside.

Scrap the outer skin of the Carrot, wash in water and chop into 1 inch lengthy medium thin pieces and keep aside.

Wash and half slit Green chillies lengthwise and keep aside.

Crush the Hog plums and keep aside or chop Star fruits lengthwise and keep aside.

Grind the grated Coconut to a smooth paste adding 2tbsp of water and keep aside.

Method:-

In a cooking vessel add the chopped White Bitter gourd pieces, Potato pieces, Yam pieces, Carrot pieces, half slit Green chillies and 2cup of Water.Boil and cook the vegetables on low flame till soft and cooked well.

Add the crushed Hog plum [or add chopped Star fruit] and required Salt and mix well. Cover the  cooking vessel with a lid and cook for 5 minutes on medium low flame.

Add ground Coconut Masala paste and mix well. Add Hing powder and mix well.Boil for few minutes and switch off the flame.

Heat Coconut oil in a pan and splutter Mustard seeds and Cumin seeds and saute well.Add Curry leaves and fry in oil and switch off the flame.

Pour the above seasoning into the Curry in the cooking vessel.

A tasty Karathya Dhave Humman is ready to serve  hot with Rice.

Note:-

You can add Star fruit [Karmbal] or Bilimbi fruit [Bimbul] instead of Hog plum [Ambado] in this recipe.

Adding Yam is optional in this recipe.

You can add Colocasia root [Mandae] instead of Yam.
