Kuvale Salli Chutney / Ash Gourd Peel Chutney.


Ash gourd peel is called Kuvale sali in Konkani. Kuvale Salli Chutney /Ash Gourd Peel Chutney is a delicious side dish goes well with Rice, Dosa, Idli etc.

The following ingredients are needed to prepare Kuvale Salli Chutney/ Ash Gourd Peel Chutney.

Ingredients:-

Ash gourd peel. - 3/4 cup
Grated Coconut. -1cup
Dry Red chillies. -5
Hing powder.       -1/2tsp
Coriander leaves. -few
Mint leaves.          - few
Urad dal.               -1tsp
Chana dal.             -1tsp
Garlic.                   -1clove
Ginger.                  - a small pieace
Tamarind.              - a marble size
Ghee.                     -1tsp
Salt.                       - to taste.

For Seasoning:-

Coconut oil.       -1tsp
Urad dal.             -1/2tsp
Mustatd seeds.    -1/2tsp
Dry Red chillies. -1 broken into halves.
Curry leaves.       -1spring

Instructions,:-

1. Wash the Ash gourd peel and chop into 1/2 inch pieces and keep aside.

2. Wash Coriander leaves and Mint leaves. Drain water and chop them roughly and keep aside.

3. Heat Ghee in a pan and roast Urad dal, Chana dal and Red chillies. Add Ash gourd peels along with required Salt and saute well for few minutes on low flame. Add Hing powder, roughly chopped Coriander leaves and Mint leaves. Saute well for 2 minutes on low flame. Keep aside the above ingredients together and allow it to cool.

Method:-

1. Grind all the roasted ingredients along with grated Coconut, Garlic, Ginger and Tamarind to a fine paste adding little water.

2. Transfer the ground the paste to a serving bowl.

3. Heat oil in a pan for seasoning and splutter Mustard seeds.Add Urad dal and saute well. Add broken dry Red chillies and Curry leaves.Saute well and switch off the flame.

4. Add the above seasoning into the chutney in the serving bowl.

 A very tasty Kuvale Salli Chutney / Ash Gourd Peel Chutney is ready to serve with Dosa, Idli and also as a side dish with Rice.
