Ghee Rice

Ghee Rice is a healthy, aromatic and delicious south Indian style one pot rice made with Ghee, Basmati rice and other spices. Ghee Rice is usually served with plain Curd or Onion Raita.

The following ingredients are needed to prepare Ghee Rice.

Ingredients:-

Basumati Rice.  -1 cup
Water.                 -2 cup
Ghee.                  -2tbsp +1tsp
Bay leaf.             -2
Cinnamon.          -1small stick
Cloves.                - 3
Cardamom pods. -3
Black Pepper       -1/4tsp
Cashewnuts.        -10
Raisins.                -10
Onion.                  -1 medium size
Lemon juice.        -1tsp
Salt.                      -to taste

Instructions:-

Wash and soak Basmati rice in water for 30 minutes and keep aside.Then drain water  completely from soaked rice and keep aside.

Peel and chop Onion into thin lengthy pieces and keep aside.
 
Chop Cashew nuts into 2 halves and keep aside.

Heat 1tsp Ghee in a pressure cooker on medium flame. Add the Cashewnuts and roast till golden  brown.Remove from ghee and keep aside the roasted Cashew nuts on a plate.Roast the Raisins till puffed and keep aside on the same plate.

Add the chopped thin lengthy pieces of Onion into the ghee and fry till golden brown colour and keep aside on the same plate.

Method:-

Heat 2tbsp Ghee in the pressure cooker and add Bay leaves, Cinnamon, Cloves, Cardamom and Black Pepper. Saute well.

Add the soaked Basmati rice into the cooker and roast well in Ghee for 2 minutes on low flame.

Add 1tsp Lemon juice and required Salt into the cooker and mix well.

Add 2 cup of Water into the cooker and mix well with the roasted rice.Boil on low flame.

Close the pressure cooker with its lid and  put the weight on it.Cook for 2 whistles or cook for 7 minutes on low flame and switch off the flame.

When the cooker cools open the lid and gently fluff the cooked Ghee Rice.

Transfer the Ghee rice to a serving bowl. Add the roasted Cashewnuts and Raisins and mix well with the cooked Ghee Rice.

Lastly garnish the Ghee Rice with fried thin Onion pieces.

A tasty and delicious Ghee Rice is ready to serve hot with  plain Curd or Onion Raita.
