Vaingana Pulichikeri /Brinjal Pulissery is a coconut and curd based curry made with long green Brinjals and goes well with rice.Brinjal is called Vaingan in Konkani.
The following ingredients are needed to prepare Vaingana Pulichikeri / Brinjal Pulissery.
Ingredients:-
Long Green Brinjal. -2
Green chilly. -1
Coconut oil. -1tsp
Curd. -1cup
Salt. - to taste
For grinding Coconut Masala paste:-
Grated Coconut. -3/4 cup
Dry Red chilly. - 5
Turmeric powder. -1/4tsp
For Seasoning:-
Coconut oil. - 1tsp
Mustard seeds. -1tsp
Cumin seeds. -1/2tsp
Curry leaves. -1spring
Instructions:-
1). Chop the stems and wash the long green Brinjals in water. Cut the Brinjals lengthwise and then chop into thick pieces and keep aside.
2). Grind grated Coconut along with dry Red chillies and Turmeric powder to a smooth paste adding very little water. Keep aside the ground Coconut Masala paste.
3). Whisk the Curd without lumps adding very little water and keep aside.
4). Wash and half slit one Green chilly lengthwise and keep aside.
Method:-
1). In cooking pan heat 1tsp Coconut oil and add half slit Green chilly and saute well for a minute.Add chopped long green Brinjal pieces and saute well for 2 minutes on low flame.
2). Add required Salt and 1/2 cup of water into the pan and boil well. Cover and cook on low flame till the Brinjal pieces become soft.
3). Add ground Coconut Masala paste into the pan and mix well with the cooked Brinjals.Cover and cook on low flame for 2 minutes.
4). Mix well and switch off the flame.
5). Add the whisked Curd into the Pulissery in the cooking pan and mix well.
6). Heat 1tsp Coconut oil in a pan for seasoning and splutter Mustard seeds and Cumin seeds. Add Curry leaves and saute well. Switch off the flame.
7). Pour the above seasoning into the Brinjal Pulissery in the cooking pan and close the pan with a lid.
8). Transfer the Brinjal Pulissery/ Vaingana Pulichikeri to a serving bowl .
