The following ingredients are needed to prepare Colocasia Leaves Stir Fry/ Taro Leaves Stir Fry
Ingredients:-
Colocasia Leaves/Taro Leaves.-15
Tamarind. - a small Lemon size
Cooking oil. -2tsp + 1tbsp
Mustard seeds. -1tsp
Hing powder. -1/2tsp
Red chilly powder. - 2tsp
Salt. - to taste
Instructions:-
1). Clean the Colocasia leaves / Taro leaves.Pluck and seperate the green leafy parts from its veins using your fingers.Discard the veins and wash the seperated leaves thoroughly in water. Drain and finely chop the leaves and keep aside.

1). Clean the Colocasia leaves / Taro leaves.Pluck and seperate the green leafy parts from its veins using your fingers.Discard the veins and wash the seperated leaves thoroughly in water. Drain and finely chop the leaves and keep aside.
2). Soak Tamarind in little warm water for 3 minutes. Squeeze and extract Tamarind juice and keep aside.
Method:-
1). Heat oil in a wide bottom pan on medium flame. Splutter Mustard seeds and saute well.
2). Lower the flame and add Red chilly powder and Hing powder into the pan and saute well.
3). Add the finely chopped Colocasia leaves/ Taro leaves into the pan.
4). Add extracted Tamarind juice, required Salt and 3/4 cup of water into the pan and boil well. Cover and cook until the leaves are cooked well and the water is completely absorbed. Stir in between. Switch off the flame.
5). Transfer the Colocasia leaves stir fry / Taro leaves stir fry to a serving plate.
6). Pour 1tbsp Coconut oil over the stir fry and mix well.
A tasty and delicious Colocasia Leaves Stir Fry/ Taro Leaves Stir Fry is ready to serve with rice.
