Crispy Pepper Vada


Flat and crispy Pepper Vada made from Black gram (Urad dal) and Black Pepper.

The following ingredients are needed to prepare flat and crispy Pepper Vada.

Ingredients:-

Whole white Urad dal. -1 cup
Rice flour.                    -2tbsp
Black Pepper.               -1tbsp crushed
Cumin seeds.                -1tsp crushed
Salt.                              - to taste.

Instructions:-

1). Wash whole white Urad dal (Black gram) in water and soak for 1 hour in sufficient water.

2). Crush Pepper corns using mortar and pestle into coarse granuels and keep aside.

3). Gently crush Cumin seeds and keep aside

Method:-

1). Drain soaked water completely and grind the soaked Urad dal to a thick and little coarse paste without adding any water.Transfer the coarsely ground Urad batter to a mixing bowl.

2). Add Rice flour, required Salt, crushed Cumin seeds and coarsely crushed Pepper granules into the ground Urad batter in the mixing bowl and mix thoroughly using hands.

3). Make small lemon size dough balls with the ground Urad batter mixture. Keep the lemon size dough balls on a plate.

4). Grease oil on a small butter paper and place a lemon size dough ball on the butter paper. Gently press the dough ball with the bottom of a steel tumbler and flatten it and make a round shaped flat vada. Make a small hole in the middle of the flattened Vada using  point finger.Make round shaped flat Vadas with the remaining lemon size dough balls.

5). Heat oil in a deep frying pan on medium flame.

6). When the oil is hot drop the flattened Vada into the hot oil and deep fry on medium flame until crispy and golden brown colour. Deep fry the flat Vadas in batches.

7). Flip and turn the Vadas with a slotted spoon to fry on all sides.

8). Remove the crispy Vadas from hot oil with slotted spoon and transfer to a tissue paper to absorb the excess oil.

9). Crispy and flat Pepper Vada is ready to serve as a tea time snack.


10). When the deep-fried Pepper Vadas are cooled to room temperature store the crispy Vadas in a clean and dry container and lasts for a week.
