Kuvale Taka Kadi (Ash gourd Buttermilk Curry)


Kuvale Taka Kadi is a curd based Konkani curry made with ash gourd and buttermilk and goes well with rice.

The following ingredients are needed to prepare Kuvale Taka Kadi / Ash gourd Buttermilk Curry.

Ingredients:-

Ash gourd.        - 250 gm
Buttermilk.       -2 cup
Green chillies.  -3
Mustard seeds. - 1tsp
Curry leaves.    -1spring
Salt.                  - to taste
Coconut oil.     -1tsp

Instructions:-

1). Chop and remove the outer skin of the a small Ash gourd piece. Then chop the Ash gourd into round slices.



2). Wash the round Ash gourd slices in water and again chop into very small pieces and keep aside.

3). Wash and chop Green chillies into thin round pieces and keep aside.

Method:-

1). In a cooking vessel add the chopped Ash gourd pieces, required Salt and 1cup of water.Boil and cook the Ash gourd pieces till soft on low flame.Switch off the flame and keep aside to cool.

2). When little cooled add Buttermilk into the cooking vessel and mix with the cooked Ash gourd pieces.

3). Heat Coconut oil in a pan for seasoning and splutter Mustard seeds and saute well.Add thinly chopped Green chilly round pieces and Curry leaves into the pan and fry in oil. Switch off the flame.

4). Pour the above seasoning into the curry in the cooking vessel. Mix well and transfer the Ash gourd Buttermilk Curry to a serving bowl.


A delicious Kuvale Taka Kadi / Ash gourd Buttermilk curry is ready to serve with rice.
