Boiled Tapioca Stir Fry / Cassava Root Stir Fry (Kappe Upkeri in Konkani) is a simple and easy to make tea time dish and can be served as a side dish with steamed rice.
The following ingredients are needed to prepare Kappe Upkeri / Boiled Tapioca Stir Fry / Cassava Stir Fry.
Ingredients:-
Tapioca / Kappa / Cassava. -1/2kg
Onion. -1
Turmeric powder. - 1/4 tsp
Kashmiri Red chilly powder. -2 tsp
Grated Coconut. -3 tbsp
Coconut oil. -2 tbsp +1tsp
Urad dal. -1tsp
Mustard seeds. - 1tsp
Salt. - to taste
Instructions:-
1). Cut the Tapioca (Kappa /Cassava) vertically into 2 inch lengthy pieces. Cut and remove the outer skin of the Tapioca (Kappa/Cassava) with a knife. Wash the Tapioca thoroughly in water to remove the dust and mud. Chop the Tapioca into medium cubes and remove the middle fiber.
2). In a vessel add the chopped Tapioca cubes and add enough water in the vessel to immerse the Tapioca cubes. Add 1/4 tsp Turmeric powder and 1/2tsp Salt into the pan. Boil and cook the Tapioca cubes till soft. Switch off the flame.Drain the boiled water completely and keep aside the boiled Tapioca cubes.
Method:-
1). Heat 2tbsp Coconut oil in a cooking pan and add Urad dal and saute well. Splutter Mustard seeds and saute well.
2). Add finely chopped Onion and required Salt into the pan and mix well. Saute well till Onion pieces become translucent.
3). Lower the flame and add Kashmiri Red chilly powder and grated Coconut into the pan and mix well for a second.
4). Add boiled Tapioca cubes into the pan and mix well. Saute well until the Red chilly powder and grated Coconut nicely coated with the boiled Tapioca cubes.Switch off the flame.
5). Add 1tsp Coconut oil on the top of the Tapioca Stir Fry and mix well.
6). Transfer the Tapioca Stir fry / Kappe Upkeri / Cassava Stir fry to a serving plate.
Serve the Kappe Upkeri /Tapioca (Cassava ) Stir Fry with a cup of tea or coffee or serve as a side dish with steamed rice.
