The following ingredients are needed to prepare White Kurma With Cashews.

Ingredients:-

Potato.                    - 2
Carrot.                    - 2
Frozen peas.           -1/4 cup
Onion.                    - 2 medium
Bay leaf.                 - 1or 2
Cinnamon.              - a small stick
Cloves.                    - 2
Cardamom.              -2
Cumin seeds.           -1/2tsp
Fennel seeds.           -1tbsp
Curry leaves.           -1spring
Ginger garlic paste. -1tsp
Oil.                          -1tbsp
Salt.                         - to taste
Coriander leaves.    - few

For grinding Coconut Cashew Paste mixture:-

Grated coconut.    -3 tbsp
Cashews.              - 8
Green chillies.      - 3
Roasted gram dal. -1tbsp (pottukadala)
Fennel seeds.        -1tbsp (perum jirakam)
Cumin seeds.        -1tsp   (jirakam)
Cinnamon.            - a small piece
Cloves.                  - 4
Cardamom.            -2

Instructions:-

1). Peel the outer skin, wash and chop potato into medium thin lengthy pieces and keep aside.

2). Scrap the outer skin, wash and chop carrot into thin lengthy pieces and keep aside.

3). Peel and finely chop onion and keep aside.


4). Wash and finely chop few coriander leaves and keep aside,

5). Grind grated coconut and cashews along with green chillies, roasted gram dal, fennel seeds, cumin seeds, cinnamon, cloves and cardamom to a fine paste. Keep aside the ground coconut cashew paste mixture.



Method:-

1). Heat oil in a pan and add bay leaves, cinnamon, cloves, cardamom, fennel seeds, cumin seeds and curry leaves into the pan and saute well.

2). Add finely chopped onion into the pan and saute well till translucent.

3). Add ginger garlic paste into the pan and saute well.

4). Add chopped potato, chopped carrot, frozen green peas and required salt into the pan.Sprinkle little water and cook the vegetables till soft.

5). Add ground coconut cashew paste mixture into the pan and mix well.

6). Add 2 cup of water into the pan and mix well.Boil and cook for 5 minutes on low flame or till the vegetables are cooked completely.

7). Add finely chopped few coriander leaves into the pan and mix well. Switch off the flame.

8). Transfer white kurma with cashews gravy to a serving bowl.

A very tasty and delicious White Kurma With Cashews is ready to serve as a healthy side dish with chapati, poori, parota, rice, dosa or idli.
