Kadgi Podi / Raw Jackfruit Fry


Kadgi Podi /Ponsa Bajo /Tender Jackfruit Fry is a Konkani style deep-fried raw jackfruit fritters made with tender jackfruit pieces and ground masala, can be served as a tea time snack or as a side dish for lunch. Kadgi Podi recipe is explained with step by step method and photos.

The following ingredients are needed to prepare Kadgi Podi / Raw Jackfruit Fry.

Ingredients:-

Tender Jackfruit. - a small piece.
Raw Rice.           - 1 cup
Tur dal.               -1tbsp
Coriander seeds. - 1tsp
Dry Red chillies. - 8
Hing powder.       - 1/4tsp
Salt.                      - to taste
Coconut oil.          - for deep frying

Instructions:-

1). Cut a small piece of tender jackfruit and chop into round pieces. Remove the outer green thorny skin of jackfruit pieces and keep them in water in a vessel.



2). Drain water completely and chop the jackfruit pieces into triangle shape thin slices.

Apply little salt on all jackfruit slices and sprinkle 2tbsp of water and mix well.

3). Keep the jackfruit slices in a steamer vessel and steam cook for 15 minutes. Transfer the steamed jackfruit slices to a plate and allow to cool.

4). Wash and soak raw rice and tur dal in water for 2 hours.In a mixer grinder add coriander seeds, dry red chillies, hing powder and required salt and grind to a smooth paste.Drain the soaked water completely and add the soaked raw rice and tur dal into the mixer grinder and grind again to a smooth paste.Transfer the ground batter to a vessel and mix the batter well.

Method:-

1) Heat oil in a deep frying kadai on high flame.

2). Once the oil is hot dip the steamed triangle shaped jackfruit slices into the ground batter in the vessel.

3). Gently drop the batter coated jackfruit slices into the hot oil one by one and deep fry on medium flame until crisp and golden brown.Deep fry the slices in batches.

4). Flip and turn the jackfruit slices in hot oil using a slotted spoon to cook the other side..

5). Once both side of the jackfruit slices are fried well and become crispy and golden colour, remove the fritters from oil with the slotted spoon and transfer to a plate.

6). Repeat the process and deep fry all the steamed jackfruit slices and keep them on a plate.

A tasty and crispy Kadgi Podi /Raw Jackfruit Fry is ready to serve as a tea time snack with tomato sauce or as a side dish for lunch.
