Baby corn in hot garlic sauce is a Indo Chinese dish goes well with chapathi, phulka, naan, roti, fried rice etc.
The following ingredients are needed to prepare Baby Corn in Hot Garlic Sauce.
Ingredients:-
Peeled Baby corn. - 250 gm
Capsicum. -1
Onion. - 1 large
Green chilly. - 2
Garlic. - 3 tbsp chopped
Celery. - 1 stalk
Crushed pepper. - 1/2 tsp + 1/2 tsp
Red chilly paste. - 2 tbsp
Green chilly sauce. - 1 tsp
Tomato ketchup. - 1 tbsp
Vinegar. - 1 tsp
Sugar. - 1/4 tsp
Salt. - to taste
Oil. - 2 tbsp+ for frying
Corn flour. - 2 tbsp +1tbsp
Water. - 1and 1/2 cup
Instructions:-
1).
Chop baby corn diagonally and add into a bowl. Add 2 tbsp corn flour,
1/2 tsp crushed pepper and little salt into the bowl. Sprinkle little
water and mix well until the baby corn nicely coated with the flour
mixture and deep fry the baby corn till crisp and keep aside.
2). Chop onion lengthwise. Cut capsicum into halves, remove the
seeds and chop into small cubes. Half slit green chillies. Finely chop
garlic.Finely chop the stalks and leaves of celery.
3). In a small bowl add 1tbsp of corn flour and 1/4 cup of water and mix it well without lumps and make a corn flour slurry.
Method:-
1).
Heat 2 tbsp oil in a wide bottom pan. Add finely chopped garlic, half
slit green chillies and finely chopped celery stalks into the pan and
saute well.
2). Add red chilly paste and mix well
3). Add finely chopped onion and saute well until onion becomes translucent.
4). Add green chilly sauce, tomato ketchup, salt, sugar and 1/2 tsp crushed pepper into the pan and mix well.
5). Add chopped capsicum into the pan and saute for a minute.
6). Add vinegar and 1 and 1/2 cup of water into the pan. Mix well and allow it to boil.
7). Add corn flour slurry into the pan and stir well, so that the gravy thickens.
8). Add fried baby corn and finely chopped celery leaves into the pan and mix well.Transfer the gravy to a serving bowl.
Baby corn in hot garlic sauce is ready to serve.
