Tomato Biryani

 Tomato Biryani is a delicious one pot rice dish made with basmati rice, onion, tomato and spices.Tomato biryani recipe is given below with step by step method and photos.
 
The following ingredients are needed to prepare Tomato Biryani.

Ingredients:-

Basmati rice.         -1 and 1/4 cup
Tomato.                 - 4
Onion.                   - 2 +1
Green chilly.          -1
Dry Red chillies.    - 2
Ginger.                   - a small piece
Garlic.                    - 4 cloves
Coriander powder. -1tsp
Turmeric powder.  -1/4 tsp
Red chilli powder. - 1/2 tsp
Garam masala.      -1/2 tsp
Mint leaves.           - 1/4 cup
Coriander leaves.   - 1/4 cup
Bay leaf.                 - 2
Cinnamon.              -1' stick
Cloves.                    - 4
Cardamom.             - 3
Star anise.               -1
Cashew nuts.           - few
Raisins.                   - few
Salt.                         - to taste
Ghee.                       - 3 tbsp

Instructions:-

1). Chop onion into thin slices, chop tomatoes into small pieces, slit  one green chilly into halves, chop ginger and garlic into small pieces, finely chop mint leaves and coriander leaves.

2). Grind one chopped onion, chopped ginger, garlic, slit green chilly, dry red chillies, few chopped mint leaves and few coriander leaves into a smooth paste.Keep aside the ground paste.

3). Wash and soak basmati rice in water for 20 minutes.Drain water completely and keep aside the soaked basmati rice.

Method:-

1). Heat 2 tbsp ghee in a pressure cooker and add cashew nuts, raisins, bay leaves, cinnamon, cloves, cardamom, star anise and saute well.Add 2 chopped onion and a pinch of salt into the cooker and saute well till onion becomes translucent.


2). Add turmeric powder, coriander powder, red chilly powder and garam masala into the cooker and saute well.Add chopped tomato pieces into the cooker and saute well till tomato becomes soft.Add few chopped mint leaves and few chopped coriander leaves into the cooker and saute well.Add ground paste and 1/4 cup of water into the cooker. Mix well and boil for a minute

3). Add soaked basmati rice, 2 and 1/4 cup of water and required salt into the cooker and mix well.

4). Boil the basmati rice mixture in the cooker.

5). Cover the cooker with its lid and cook the basmati rice for 1 whistle and switch off the flame.When the pressure releases open the cooker lid.

6). Allow the tomato biryani to cool for a minute.Gently stir the tomato biryani with a fork without breaking the rice.

7). Transfer the tomato biryani to a serving plate.

A very tasty tomato biryani is ready to serve with onion curd raita or any side dish of your choice.
