Bottle Gourd Coconut Masala Curry
Bottle Gourd Coconut Masala Curry is a very easy to prepare tasty curry goes well with rice.The following ingredients are needed to prepare Bottle Gourd Coconut Masala Curry.
Ingredients:-
Bottle Gourd. -1 medium size
Bilimbi. -3
Grated coconut. -1 cup
Red chilly flakes. -1tbsp
Turmeric powder -1/4 tsp
Mustard seeds. -1tsp
Urad dal. -1tsp
Curry leaves. -few
Coconut oil. -1tsp
Instructions:-
1). Peel the outer skin of bottle gourd. Remove the seeds and chop the bottle gourd into medium thick pieces.
2). Grind grated coconut along with red chilly flakes and turmeric powder to a smooth paste adding very little water. Keep aside the ground coconut masala paste.
3). Chop bilimbi into small round pieces and keep aside.
Method:-
1). In a wide bottom cooking vessel add the chopped bottle gourd pieces, chopped bilimbi pieces, required salt and 2 cup of water. Boil and cook the bottle gourd pieces till soft.
2). Add ground coconut masala paste into the cooking vessel and mix with the cooked bottle gourd pieces. Boil the curry on low flame for 2 minutes and switch off the flame.
3). Heat 1tsp coconut oil in a small pan for seasoning. Add urad dal and saute well. Splutter mustard seeds. Add curry leaves and fry in oil for a second and switch off the flame.
Very tasty Bottle Gourd Coconut Masala Curry is ready to serve with rice.
Ridge Gourd Kootu / Peerkangai Kootu
Peerkangai kootu / Ridge gourd kootu / Peechinga curry is a easy to prepare very tasty curry made with ridge gourd and goes well with rice.
The following ingredients are needed to prepare Ridge gourd Kootu / Peerkangai Kootu.
Ingredients:-
Ridge gourd. -1
Yellow moong dal.-1/4 cup
Chana dal. -2 tbsp
Tomato. -2
Small onion. -3
Garlic crushed. -2
Turmeric powder. -1/4 tsp
Urad dal. -1tsp
Mustard seeds. -1tsp
Cumin seeds. -1tsp
Dry red chillies. -2
Curry leaves. -few
Water. -as required
Salt. -to taste
Ghee. -2 tsp
For grinding Coconut Green Chilly Paste:-
Grated coconut. -1/2 cup
Green chilly. -3
Instructions:-
1). Wash and cut ridge gourd into small pieces. Finely chop small onions. Chop tomatoes into lengthy slices. Keep aside.
2). In a mixer grinder add grated coconut and green chilies and grind to a smooth paste adding little water. Keep aside the ground coconut green chilly paste.
Method:-
1). In a pressure cooker add yellow moong dal, chana dal, sliced tomatoes, crushed garlic, chopped ridge gourd pieces, 1/4 tsp turmeric powder, required salt and 1 cup of water and cook for 2 whistles. Switch off the flame.
2). Once the pressure cooker cools down open the cooker lid. Add the ground coconut green chilly paste into the cooker and mix with the cooked ridge gourd mixture. Allow it to cook for 3 minutes on low flame and switch off the flame.
3). Heat ghee in a pan. Add urad dal into the pan and saute well. Splutter mustard seeds and cumin seeds. Add dry red chillies, curry leaves and asafoetida into the pan and fry in oil for a second. Add finely chopped small onion into the pan and saute well. Switch off the flame.
4). Add the above seasoning into the cooked ridge gourd mixture in the cooker and let it boil for 2 minutes on low flame and switch off the flame.
Ridge Gourd Kootu / Peerkangai Kootu / Peechinga Curry is ready to serve hot with rice.
Onion Stir Fry
Onion stir fry is a very tasty and easy to prepare side dish that can be served with roti, chapathi and bread.The following ingredients are needed to prepare Onion Stir Fry.
Ingredients:-
Onion. -2
Red chilly powder.-3/4 tsp
Turmeric powder. -12 tsp
Asafoetida. -1/2tsp
Urad dal. -1/2 tsp
Mustard seeds. -1tsp
Green chilly. -1
Curry leaves. - few
Water. -2 tbsp
Vinegar. -1/2 tsp
Salt. - to taste
Coconut oil. -1tbsp +1tsp
Instructions:-
Peel and chop onions into thin lengthy slices. Slit green chilly. Keep aside.
Method:-
1). Heat 1tbsp coconut oil in a pan. Add urad dal and saute well. Splutter mustard seeds.
2). Add slit green chilly and few curry leaves into the pan and saute well.
3). Add thinly chopped onion slices and required salt into the pan and saute well.
4). Add turmeric powder, red chilly powder and asafoetida into the pan and mix well. Sprinkle little water and mix well. Cover and cook onion slices on low flame for 2 to 3 minutes.
5). Add vinegar and mix well. Stir in between and switch off the flame.
Lastly add 1tsp coconut oil and mix well. Transfer the onion stir fry to a serving plate.
Very tasty Onion Stir Fry is ready to serve with roti, chapathi or bread.
Cajun Potatoes/ Cajun Spice Potatoes
Cajun potato is a delicious starter made with cooked baby potatoes topped with creamy and spicy cajun sauce and garnished with finely chopped onion and coriander leaves.
The following ingredients are needed to prepare Cajun Potatoes / Cajun Spice Potatoes.
Ingredients:-
Baby Potatoes. -15
Salt. -1/2 tsp
Water. -as required
Oil. -for frying
For preparing Batter:-
All purpose flour /Maida. -1/4 cup
Corn flour. -1/4 cup
Chilly flakes. -1/4 tsp
Pepper powder. -1/4 tsp
Salt. -1/2 tsp
Water. -as required
For Cajun Sauce:-
Mayonnaise. -3/4 cup
Pepper powder.-1/4 tsp
Garlic powder. -1/2 tsp
Onion powder. -1/2 tsp
Chilly flakes. -1/2 tsp
Salt. -1/2 tsp
Milk. -as required
For Garnishing:-
Onion. -1 finely chopped
Coriander leaves.- few finely chopped
Instructions:-
Wash baby potatoes with skin and pressure cook for 2 whistles adding 1/2 tsp salt and required water and allow it to cool. Once cooled peel the outer skin and slightly press the cooked baby potatoes using your palm and slightly flatten it. Keep aside.
Method:-
1). In a bowl add 1/4 cup all purpose flour (maida), 1/4 cup corn flour, 1/4 tsp chilly flakes, 1/4 tsp pepper powder, 1/2 tsp salt and 1/2 cup of water. Mix well and make a batter without lumps.
2). Dip the slightly pressed baby potatoes in the batter to coat the batter on all sides. Fry the batter coated baby potatoes in hot oil on medium flame until crisp and golden colour on both sides and keep aside.
3). In a bowl add 3/4 cup mayonnaise, 1/4 tsp pepper powder, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp chilli flakes, 1/2 tsp salt and required milk. Mix together all the ingredients and make cajun sauce.
4). Place the fried baby potatoes on a serving plate and pour the cajun sauce over it. Garnish with finely chopped onion and coriander leaves on the top.
Cajun Potatoes/ Cajun Spice Potatoes are ready to serve.
