Mushroom kurma is a delicious one pot mushroom curry recipe made in pressure cooker using button mushroom, onion, tomato, spices and freshly ground coconut cashew paste. The following ingredients are needed to prepare Mushroom Kurma / Button Mushroom Curry
Ingredients:-
Mushroom. -200 gm
Onion. -2
Tomato. -1
Ginger garlic crushed.-1tbsp
Curry leaves. -few
Cumin seeds. -1tsp
Turmeric powder. -1/4 tsp
Red chilly powder.-1tsp
Coriander powder. -1tsp
Grated coconut. -5 tbsp
Cashew nuts. -6
Roasted gram dal. -1tbsp
Pepper corn. -1tsp
Fennel seeds. -1tsp
Poppy seeds. -1tsp
Cinnamon stick. -1
Cloves. -3
Cardamom. -1
Stone flowe / Kalpasi.-2
Oil. -2 tbsp
Salt. -to taste
Water. -as needed
Coriander leaves. -2 tbsp finely chopped
Method:
1). Wash and chop button mushrooms into pieces and keep aside.
2). Finely chop onions, finely chop tomato, crush ginger and garlic and keep them on a plate along with a few curry leaves.
3). In a mixer add grated coconut, cashew nuts, roasted gram dal (pottu kadala), pepper corn, fennel seeds, poppy seeds, cloves, cinnamon stick, cardamom, black stone flower (kalpasi) and grind to a smooth paste.
4). Grind all the ingredients in the mixer together to a smooth paste adding required water. Keep aside the freshly ground coconut cashew paste mixture.

Heat 2 tbsp oil in a pressure cooker. Splutter cumin seeds. Add crushed
ginger and garlic and saute well for 2-3 minutes. Add a few curry
leaves and saute well. Add finely chopped onion and saute well until
onion turns translucent. Add
finely chopped tomato and saute well until the tomato becomes soft. Add
turmeric powder, red chilly powder, coriander powder and saute well on
low flame for 2 minutes.
Add chopped button mushroom pieces and mix well. Add freshly ground coconut cashew paste mixture and required salt and mix with mushroom pieces. Add 2 cups of water and mix well. Cover the cooker and cook for 2 whistles on medium flame. Once the pressure releases open the cooker. Add finely chopped coriander leaves and mix the mushroom kurma /mushroom curry.
Very tasty Mushroom Kurma / Mushroom Curry is ready to serve with chapati and rice.
