Pumpkin Green Gram Curry / Cherupayar Mathanga Curry
Pumpkin green gram curry also known as Pumpkin and green moong curry / Cherupayar mathanga curry is very tasty and easy to prepare coconut masala curry made in a pressure cooker using pumpkin and green gram adding freshly ground coconut masala paste and goes well with rice or chapati.
The following ingredients are needed to prepare Pumpkin Green Gram Curry / Pumpkin and Green Moong Curry / Cherupayar Mathanga Curry.
Ingredients:-
Pumpkin. -250 gm
Green gram. -1/4 cup
Turmeric powder.-1/4 tsp
Water. -as needed
Salt. - to taste
Coconut oil. -2 tsp
Curry leaves. -1 sprig
For Grinding Coconut Masala Paste:
Grated coconut. -1/2 cup
Cumin seeds. -1/2 tsp
Green chilly. -2
Shallots/small onions.-3
Instructions:-
Chop and remove the outer skin and seeds of pumpkin and chop the pumpkin into very small pieces.
Method:-
1). Wash and pressure cook green gram along with chopped pumpkin pieces, turmeric powder, required salt and 1 and 1/2 cup water for 4 whistles.
2). In a mixer add grated coconut, cumin seeds, green chillies, shallots (small onions) and grind to a smooth paste.
3). Once pressure is released open the cooker and add the freshly ground coconut masala paste and mix with cooked pumpkin green gram mixture in the cooker and boil on low flame for 2 minutes and switch off the flame.
4). Add 2 tsp coconut oil and 1 sprig curry leaves into the curry and cover the cooker for a few minute.
5). Open the cooker and mix the pumpkin green gram curry using a ladle.
Very tasty Pumpkin Green Gram Curry / Pumpkin and Green Moong Curry / Cherupayar Mathanga Curry is ready to serve with rice or chapati.
