Green gram is called Mugu in Konkani.Mugu is used to make Upkari,and so many yummy and tasty dishes.In konkani Upkari means dry side dish or Stir fry.Green gram is a good source of Protein for the vegetarians and is rich in Vitamine .This side dish is easy to prepare and is made without Onion. So you can make this recipe on festivel days too.You can serve this Upkari as a healthy snack or serve with your lunch and dinner.Children and adult love this yummy dish.We can prepare this dry side dish with or without adding Coconut grating.
To make this tasty and healthy Mugga Upkari we need the following ingredients.
Ingredients:-
Green gram/Mugu. - 1 cup
Salt. -to taste
For Seasoning:-
Coconut oil. - 1tsp
Mustard seeds. - 1tsp
Green chilly. - 3 half slit
Curry leaves. - 1spring
Grated Coconut. -1 tbsp for garnishing [optional]
Instructions:-
Clean, wash and soak 1 cup Green gram for 6 hours or overnight.Drain soaked water and pressure cook the soaked Green gram adding sufficient water and little Salt for 2 whistles or till soft but not mushy.Keep aside the cooked Green gram.
Wash and half slit Green chillies and keep aside.
Method:-
Heat Coconut oil in a pan and splutter Mustard seeds.Add half slit Green chillies and add Curry leaves into the pan.Saute well and fry for a minute.
Add the cooked Green gram into the pan and saute well.
Check for Salt and add little Salt and sprinkle little water if needed. Cover the pan with a lid and cook for 2 minutes.Saute in between and switch off the flame.
Garnish with freshly grated Coconut.[optional]
A tasty Mugga Upkari /Green gram stir fry is ready to serve as a side dish with steamed Rice or as a snack with milk, coffee or tea. A healthy and tasty snack loved by children and adults equally.
