DAHI BESAN KADHI.

Dahi Besan Kadhi is most popular in North India and is commonly made in North Indian house holds.

Dahi Besan Kadhi is a blend of Yogurt and Besan.

This Kadhi is prepared by whisking the sour Yoghurt with Water and Gram flour and then cooking the liquid with spices.

Usually this Kadhi is prepared for lunch and served with plain boiled Rice.

Dahi Besan Kadhi is very simple and tasty.It is a favourable dish for North Indian wedding lunch.

The following ingredients are needed to prepare this delicious Kadhi.

Ingredients:-
Butter milk.         -5 cup
Besen.                  -4 tsp
Salt.                      -to taste
Sugar.                   - a pinch
Hing.                    -a pinch
Turmeric powder. - little

For a rough paste:-
Green chilly.         - 4
Garlic flakes.        -4
Coriandar leaves. - little

For grinding:-
Ajwain.                     - 1/2tsp
Methi seeds.              - few
Dry Coriander seeds. - 1/2tsp
Cinnamon.                 - a small piece
Jeera.                          - 1/2tsp
Black Pepper.              -3

Instructions :-
In a vessel mix 5 cups of Butter milk, 4 tsp Besan ,Salt, Sugar, a pinch of Hing and a little Turmeric powder and make a batter Add Water as per requirements.Wait for 2 minutes and then put on gas.
As it reaches to boiling point switch off the gas and keep aside.

Make a rough paste of 4 Green chillies, 4 Garlic flakes, and little chopped Coriander leaves.Keep aside.

Grind  Ajwain, few Methi seeds,small piece of Cinnamon, dry Coriander seeds,Jeera and 3 Black Pepper to a  coarse powder. Keep aside.

Method:-
Heat Oil in a thick bottom pan and splutter Mustard seeds.
Add Jeera, Hing, Curry leaves, dry Red Chillies and 2crushed Garlic flakes and fry a little.

Add the rough paste of  Green chilly, Garlic,  Coriander leaves mix paste and saute a minute.

Add the ground spices powder and saute well.

Now add Butter milk, required Salt and Sugar and stir it for a minute.

Put the gas on sim.Wait till the boil comes.Just before it switch off the gas.

Transfer to a serving bowl and garnish with chopped Coriander leaves.

An aromatic Dahi Besan Kadhi is ready to serve with plain boiled Rice.
