The following ingredients are needed to prepare Kuvale & Thaak Ambat
Ingredients:-
Ash gourd. - 2cup chopped
Salt. - to taste
Green chilly. -2 half slit lengthwise
For Grinding Coconut Masala paste.
Grated Coconut. -1 cup
Jeera. -1/4 tsp
Curd/Butter milk -1/2cup ( sour)
For Seasoning:-
Coconut oil/Oil. -1tsp
Mustard seeds. -1/2tsp
Cumin seeds/Jeera. -1/2tsp
Curry leaves. -1spring
Instructions:-
Wash and half slit Green chillies lengthwise and keep aside.
Grind the grated Coconut with Cumin seeds to a smooth paste adding 1/2 cup Curd.Keep aside.
Peel the outer skin of a small Ash gourd.Wash and chop the Ash gourd into square pieces.-2 cup
Pressure cook the chopped Ash gourd pieces with little Salt till soft but not mushy.Keep aside.
Method:-
In a cooking vessel add the cooked Ash gourd pieces with required water and add the half slit Green chillies and boil for 2 minutes.
Add the ground Coconut Masala paste to the cooked Ash gourd pieces in the cooking vessel. Mix well and boil for 2 minutes on low flame.
If using Butter milk add it now and switch off the flame once you see the boiling bubbles comming. [Do not boil too much.]
If using Curd,whisk it well and add the whisked Curd only after the gravy has cool down a bit.
Check for Salt and add little Salt and mix well if needed. [Salt is already added when cooking the Ash gourd pieces]
Heat Coconut oil in a pan for seasoning and splutter Mustard seeds and Cumin seeds and saute well. Add Curry leaves and fry the Curry leaves for a second and switch off the flame.
Add the above seasoning into the Kuvale & Thaak Ambat in the cooking vessel.
A yummy and tasty Ash gourd & Thaak Ambat is ready to serve with Rice.
