PANCHAGADAYI / Broken Wheat Kheer / Gova Kona Kheeri


Panchagadayi is a traditional konkani dish.

It is a sweet dish prepared with Broken Wheat Rava,fresh Coconut Milk and Jaggery . 

Broken Wheat is called Gova kono in Konkani and the dish is also called Gova Kona Kheeri.

In almost all Kochi GSB houses "Panchagadayi" is the main dish especially  prepared  on Sreekrishna Janmashtami festival.

The following ingredients are needed to prepare this delicious Kheer.

Ingredients:-


Broken Wheat Rava. -3/4 cup
Jaggery.                    -1/2 kg
Chana dal.                -1/4 cup
Split Moong dal.        -1/4 cup
Coconut Milk.            - extracted from a big Coconut.
Ghee.                        - 1tsp
Cardamom powder . -1 tsp
Cashew nuts.            -10



Instructions:-


Heat little Ghee in a pan and fry Cahew nuts until it turns golden brown Keep aside.

In a pan dry roast Chana dal and Split Moong dal seperately until you get a nice aroma of the roasted dal.

Pressure cook both the dal together adding 1cup Water for 3 whistles or for 15 minutes or till the dal become soft and firm. Keep aside.

Crush the Jaggery .Boil 1/4 cup Water in a pan and add the crushed Jaggery to it and dissolve the Jaggery in water. Filter it to remove impurities and keep aside.

Grate a big Coconut and grind the Coconut grating with 1cup Water to a smooth paste.
Strain the paste through a strainer and squeeze to collect the thick Coconut Milk.
Keep aside the thick First Coconut milk.

Again put the squeezed Coconut remains in the blender and add 1cup Water and grind again.Squeeze and strain again to collect the thin Coconut Milk.Keep aside the thin Second Coconut Milk.

Similarly continue the same process and collect the Third Coconut Milk which is very thin.Keep aside the very thin Third Coconut Milk and discard the Coconut residue.



Method:-


In a thick bottom pan dry roast Broken Wheat Rava on medium flame stirring continuously until it is hot to touch.

Add theThird and Second thin Coconut Milk and mix with the broken Wheat Rava and bring to boil.Stir continuously without forming any lumps.You can add some hot Water if needed.

Boil and cook the Broken Wheat Rava in thin Coconut Milk on low flame stirring continuously till the Rava is well cooked.When cooked,the Rava will be puffed up.


When Rava cooked well add the roasted and cooked Chana dal and split Moong dal and mix with the cooked Broken Wheat Rava and stir well.


Add the Jaggery Water to the cooked Rava.Mix  and stir well continuously.

When the Rava thickens add the thick First Coconut Milk and stir well.As it starts to boil switch off the flame.

Add Cardamom powder and mix well.

Add the fried Cashew nuts  to the cooked Broken Wheat Kheer and mix well.


Lastly add 1tsp Ghee into the hot Kheer and  mix well.

A sweet and delicious Panchagadayi / Broken Wheat Kheer is ready to serve.

Serve hot.
