Ivy Gourd is called Tenduli /Tendli in Konkani. Sukkhae in Konkani means dry dish.Tenduli is a nutrious vegetable and has several health benefiting properties.Tendli is very popular in Konkani cusine.We can prepare varieties of dishes with Tenduli. Tenduli is used for Stir fry, Curries and Pickles Tenduli Sukkhae is a Kochi GSB style konkani dish.Tenduli Sukkhae is a simple Coconut based Masala curry and easy to prepare.
The following ingredients are needed to prepare this dry dish.
Ingredients:-
Tenduli. -8 [tender]
Salt. -to taste
Dharambe sol (Kudam puli).- a small piece
For grinding Coconut Masala:-
Coconut grated. -1cup
Red chilly. -5
Tumeric powder. -1/4tsp
For Seasoning:-
Coconut oil /Oil. -2tsp
Urad dal. -1tsp
Mustard seeds. -1tsp
Instructions:-
Wash and chop both the ends and slice 8 Tendulis into medium thin round shaped slices and keep aside.
Grind 1cup Coconut grated, 5 dry Red chillies and 1/4 tsp Turmeric powder to a smooth paste without adding Water and keep aside.
Method:-
Heat 2tsp Coconut oil in a pan and splutter 1tsp Mustard seeds.
Add 1tsp Urad dal and saute well till Urad dal change its colour.
Add the chopped Tenduli slices and saute well .
Add Salt and Dharambe sol and mix well.
Cover the pan with a lid and cook the Tenduli slices in low flame till soft and cooked.
When the Tenduli pieces cooked add the ground Coconut Masala paste.Mix well and cook for 2 minutes.Saute in between. Switch off the flame.
A tasty Tenduli Sukke is ready to serve as a side dish with Rice and dal Curry.
Add Salt and Dharambe sol and mix well.
