Idiyappam is called Sevai in Konkani.
It is also known as Nool Puttu and String hoppers in English.
Idiyappam along with Veg Kurma/Kadala Curry is a common breakfast in Kerala and is a very healthy breakfast as it is steam cooked.
Idiyappam can also be served with fresh Coconut Milk or Potato Gravy.
You can sprinkle some sugar on top of the Idiyappam and serve them.
The recipe of Idiyappam is very simple,quick,healthy and easy to make.
The following ingredients are needed to prepare Idiyappam.
Ingredients:-
Rice flour. -1cup
Hot Water. -1and 1/2 cup
Salt . - 1/4 tsp or to taste
Oil. -2tsp
Coconut grating. -1/4 cup [fresh]
Water for steaming. -2cup
Instuctions:-
Heat a pan and add 1cup Rice flour and roast for 5 minutes on low flame stirring continuously untilSwitch off the flame and transfer to a mixing bowl.
In the same pan add 1 and 1/2 cup Water.When the Water starts to boil add Salt and 2tsp Oil and switch off the flame.
Add this hot Water in the Rice flour little by little and mix with a spoon or spatula.
After 2 minutes knead the dough thoroughly with your hands to make a smooth and Soft dough without any lumps.
Now the Rice dough is ready to make Idiyappam.
Method:-
Divide the Rice dough into each portions.
Grease little Oil on each Idli Thattu of the Idli stand and keep ready.
Add 2tsp Coconut grating on each Idli Thattu before pressing the Rice dough in each Idli Thattu.
Grease the inside portion of the Idiyappam Press and put the Idiyappam mould into the Press.
Fill each portion of the Rice dough in the Idyappam Press and gently press the mould with little pressure to make Idyappam on each Idli Thattu. .
Now keep the Idli Thattu on its stand .
Add 2 cup Water in a Pressure cooker and let it come to a boil.
Now place the Idli stand in the Pressure cooker.Remove the whistle and cover the Cooker with its lid and steam for about 5 minutes,until cooked on medium flame.
Then switch off the flame and let the Idiyappam be inside the steamer for 1 minute and then remove .
Transfer the steamed Idiyappam to a plate from each Idli Thattu.
Now hot Idiyappam is ready to serve.
You can sprinkle some sugar on top of the iIdiyappam and serve them.
You can also serve the Idiyappam with sweetened Coconut milk or with Vegetable Kurma, or with Potato Curry or Kadala Curry.
Notes.
Sweetened Coconut milk---[Fresh Coconut Milk+ Sugar + Cardamom Powder]
Do not over cook the Idiyappam, or else it will become tough and rubbery.
