Banana stem/Banana pith is called Gabbo in Konkani.The inner most part of the Banana stem is called Banana pith.The tender portion of the stem is used in cooking.

The following ingredients are needed to prepare this delicious Banana stem Curry.
Ingredients:-
Gabbo/Banana pith. -1 small(tender)
Dry Red chilly. - 4
Tamarind. - a small lemon size.
Salt. -to taste
For Seasoning:-
Coconut oil. -1tsp
Mustard seeds. -1tsp
Curry leaves. -1 spring
Instructions:-
Clean a small tender Banana stem/Banana Pith/Gabbo.
With a sharp kitchen knife chop a small tender Banana pith/ Gabbo into thin roundels.
Remove and discard the string of fibre(net like fibre) between each Gabbya roundels by rolling them around your fingers when you chop the Gabbo roundels.
Put the sliced thin Gabbo roundels in Water.
Remove from water and chop the thin roundels together into very small square pieces. Keep aside.
Roast dry Red chillies in little Oil till crispy and keep aside.
Soak a small lemon size Tamarind in little warm Water.Keep aside.
Grind the roasted Red chillies and soaked Tamarind along with required Salt to a fine paste.Keep aside.
Method:-
In a mixing bowl put the chopped Banana pith/ Gabbo pieces and slightly crush them with your fingers.
Mix well the ground paste of roasted Red chillies and Tamarind with the chopped Gabbo pieces in the mixing bowl.
Heat Coconut Oil in a pan and splutter Mustard seeds.Add Curry leaves and saute well till the Curry leaves become crunchy.
Pour this Seasoning over the Gabbya Thambida Polthe /Banana stem spicy Curry in the mixing bowl and mix well.
A tasty,fresh and crunchy Gabbya Thambida Polthe /Banana stem spicy Curry is ready to serve as a side dish with Rice.
