Brinjal is called Vyngan in Konkani.Vyngan Chirdelle is a traditional GSB Konkani dish made with boiled and smashed Brinjal along with roasted Red chilly and Tamarind .Vyngan Chirdelle is a lip smacking side dish goes well with steamed Rice.
The following ingredients are needed to prepare this dish.
Ingredients:-
Purple Brinjal. -4 medium size
Red chillies. -2
Tamarind. -a small gooseberry size.
Hing powder . -1 tsp
Salt. -to taste.
For Seasoning:-
Coconut oil. -1tsp
Mustard seeds. -1tsp
Curry leaves. -1 spring
Instructions:-
Remove the stems of the Brinjal and Wash them well.
Chop the Brinjal lengthwise into large pieces and keep them immerse in Water until use.
Boil little Water in a vessel and add the chopped Brinjals and cook until it is soft and mushy. Keep aside for cooling
When cooled remove the outer skin of the cooked Brinjal pieces and then mash it thoroughly with the boiled and cooked Water using your fingers.. Keep aside.
Heat 1tsp Coconut oil / Oil in a pan and roast 4 dry Red chillies till crispy but not to burn.Keep aside.
Soak a lemon size Tamarind in Water to extract the Tamarind paste.Keep aside.
Grind the roasted Red chillies with Salt and the Tamarind paste to a fine paste.Keep aside.
Method:-
In a mixing bowl mix well the ground paste of Red Chilly and Tamarind with the cooked and mashed Brinjal .
Add Salt and 1tsp Hing powder to it and mix everything well.
Heat 1tsp Coconut oil /Oil in a pan and splutter 1tsp Mustard seeds. Add Curry leaves and fry the Curry leaves for a second.Switch off the flame.
Add this seasoning into the Vaingan Chirdille /Spicy Brinjal Gojju in the mixing bowl and mix well.
The consistency of the Vaingan Chirdille /Spicy Brinjal Gojju is thick.
A tasty, yummy and a lip smacking Vyngan Chirdille / Spicy Brinjal Gojju is ready to serve as a side dish with Rice.
