Pumpkin flower/ Squash Blossom is called Duddini phool in Konkani.This Stir fry is a simple dish.The recipe is simple, quick and easy to make with limited ingredients.Pumpkin flowers are available in Kochi area local vegetable shop during winter season.Pumpkin flower stir fry is one of the most favourite dish among Kochi GSB Konkani community.Pumpkin flower stir fry goes well with rice.

Ingredients:-
Pumpkin flowers with tender stems. -15
Salt. -to taste
For Seasoning:-
Coconut oil/Oil. -1tsp
Mustard seeds. -1/2tsp
Green chillies. -2
Instructions shown with Step by Step Pictures:-
1. Take the Pumpkin flowers /Squash Blossoms with tender stalks.
2. Seperate the flowers from the tender stalk and keep aside.
3. Remove the green sepals around the Pumpkin flowers.
4. Discard the green sepals around the flowers.

5. Cut each Pumpkin flower /Squash blossom into 2 halves lengthwise. Remove any tiny bugs or worms inside it and wash the Pumpkin flowers in water two three times. Drain water completely from the Pumpkin flowers and keep aside. Sometimes there will be some worms in the stiga of the Pumpkin flowers.
6. Peel the outer skin of the tender Stalks of the Pumpkin flower and discard the outer skin.
7. Wash the tender stalks in water and chop into small pieces and keep aside.
8. Chop the Pumpkin flowers into medium pieces. Keep aside the chopped Pumpkin flowers and chopped stalks on a plate.
9. Wash and slit Green chillies into two halves lengthwise and keep aside.
Method:-
1. Heat Coconut oil or any Cooking Oil in a pan and splutter Mustard seeds. Add slit Green chilly halves and saute well and fry the Green chillies in oil for a second.
2. Add the chopped tender Stalks and saute well. Add required Salt and mix well with the slit Green chillies and chopped Stalks.
Cover the pan with a lid and cook the chopped stalks till soft and well cooked for 5 minutes on low flame.
3. Add the chopped Pumpkin Flowers and stir well and mix with the stalks.
Cover the pan with a lid and cook till the Pumpkin flowers shrink a bit and the water completely evaporates.Then switch of the flame and transfer the delicious stir fry to a serving plate.
4. A very tasty and delicious Pumpkin Flower Stir Fry/ Duddini Phool Upkeri/ Stir Fried Squash Blossoms is ready to serve hot with Rice.
