AVIYAL/ Mixed Vegetable Curry


Avial is a tasty, yummy and delicious mixed vegetable semi thick gravy. You can add any vegetables to prepare this Avial recipe.

The following ingredients are needed to prepare this delicious Avial recipe.

Ingredients:-


Raw Banana.        -1 small
Yam.                      - a small piece
Carrot.                   -2 medium size
Drumstick.             -2
Long beans.          -4
Ash gourd.            - a small piece
Snake gourd.        - a small size
Green chilly.          -6
Red chilly powder.- 2 tsp
Turmeric Powder.  -1/4 tsp
Tamarind juic.e      -2 tbsp or Curd. -1/2 cup
Salt.                       -to taste
Curry leaves.         -1spring
Coconut oil.           -1tbsp




For grinding:-


Grated Coconut.      -1cup
Cumin seeds/ Jeera -1 tsp
Green chilly.              -1
Shallots.                    -2 small(optional)

Instructions:-


Chop and remove the outer skin of a small Yam piece and wash the Yam piece to remove the mud. Then chop the Yam piece into 1 inch lengthy pieces and wash again and keep aside.-1/2cup

Remove the hard outer skin of a small Ash gourd and chop into 1inch lengthy pieces. Wash and keep aside.-1/2 cup

Peel the skin of Raw Bananas, Carrot, Drumstick, Snack gourd, Long beans/ green Chawli.Wash and chop them into 1inch lengthy pieces and keep aside.

Wash and half slit Green chillies lengthwise and keep aside.

Coarsely grind grated Coconut, Cumin seeds/ Jeera and 1Green chilly( can add Shallots while grinding-optional) without adding Water and keep aside.



Method:-

In a cooking vessel boil 1/4 cup Water and add the chopped Vegetables .Boil and cook the vegetables till soft and stir in between

When the Vegetables 3/4 cooked add 1tsp Red chilli powder, 1/4 tsp Turmeric powder
and Salt.Mix well and boil for 2 minutes.

Add 2tbsp Tamarind paste or1/2 cup Curd to the cooked Vegetables and stir well.

Add the coarsely ground Coconut paste and stir well.


When the Water evaporates and the ground Masala coated well with the Vegetables switch off the flame.

The consistency of the Avial gravy is semi thick.


Add fresh Curry leaves and mix well.

Add 1 tbsp pure Coconut Oil over the Avial in the cooking vessel.

A tasty , yummy and delicious Avial is ready to serve with Rice.
