Brined Baby Mango Pachadi is a Konkani dish.Brined baby mangoes are called Mitta Gallali Ambuli in Konkani and Uppilitta Kanni Manga in Malayalam.We can make Konkani style a very tasty, delicious, lip smacking, little spicy and tangy Pachadi with brined baby mangoes using limited ingredients. You can use any type of cooking oil for seasoning.But seasoning in Coconut oil makes the Pachadi more tasty.Add very little Salt in the curry as the brined baby mango has salt in it.

Ingredients:-
Brined Baby Mangoes. -5 or 6
Green chillies. -6
Coconut grated. -1 cup
Curd. -3/4 cup
Salt. -to taste
For Seasoning:-
Coconut oil/Oil. -1tsp
Mustard seeds. -1tsp
Dry Red Chilly. -2
Curry leaves. -1spring

Instructions:-
Wash the Brined Baby Mangoes in water and finely chop them and keep aside.
Wash and finely chop the Green chillies and keep aside.
Whisk the Curd and keep aside.
Broke the dry Red chillies into 2 halves and keep aside.
Method:-
Grind the finely chopped Brined Baby Mangoes along with finely chopped Green chillies,grated Coconut, whisked Curd and little Salt to a fine paste. Add very little Salt as the Brined baby mango has Salt in it.Do not add water.
Transfer the ground Mango paste into a bowl or vessel.
The consistency of the gravy is semi thick.You can increase or decrease the consistency according to your choice.To make thin consistency you can add little whisked curd and mix well with the ground Mango paste and check Salt.
Heat Coconut oil in a pan and splutter Mustard seeds.
Add broken dry Red Chillies and Curry leaves and fry for a second and switch off the flame.
Add this Seasoning into the Curry in the bowl/vessel.
A very tasty and lip smacking Brined Baby Mango Pachadi/ Konkani style Mitta gallali Ambuli pachadi is ready to serve with hot steaming Rice.
