Brined/ Salted Baby Mangoes are called Mitta Gallali Ambuli in Konkani.This Konkani style spicy, tangy, sour and salted Baby Mangoes Gojju is made with brined Baby Mangoes,roasted Red chillies,Salt and Coconut oil.This lip smacking side dish goes well with hot steaming Rice.
During raw and tender Mango season tender and small baby raw Mangoes are collected.Washed and pat dried with a clean dry cloth and keep them in large jars.Then boiled and cooled Salt Water is poured into the jar to presere the tender Mangoes.This preserved tender mangoes last for a very long time in Salt water in the jar.These preserved tender mangoes are called Brined Baby Mangoes/Salted Baby mangoes.Always use clean and dry spoon to take out the Brined Mangoes from the jar.Otherwise fungus will enter into the jar and decay the mangoes.We can make varities of dishes and lip smacking Pickles with this brined Baby mangoes.
The following ingredients are needed to prepare this delicious Gojju.
Ingredients:-
Brined Baby Mangoes. -3 or 4
Dry Red chillies. -5
Salt. -to taste
Hing powder. -a pinch
Coconut oil. -2 tsp
Instructions:-
Wash and finely chop brined baby Mangoes along with skin and tender seeds and keep aside.
Roast Red chillies in oil till crispy and keep aside.
Method:-
Grind the finely chopped brined baby Mangoes along with roasted Red chillies and little Salt to a fine paste.Add very little Salt as the brined mango has Salt in it.Do not add Water.
If the Brined Baby Mangoes are very soft you can mash them using your hands.
Transfer the ground mango paste into a bowl.
Add a pinch of Hing powder and mix well.
Add Coconut oil over the mango paste and mix well.
A tasty, spicy, tangy, sour, salty and lip smacking brined baby Mango Gojju/ Mitta Gallali Ambuli Daddaylali / Uppilitta Kanni Manga Chutney is ready to serve as a side dish with hot steaming Rice.
