Raw Mangoes preserved in boiled and cooled Salt Water( Brine) is called Brined Mangoes.Brined Mango is called Mitta gallalo Ambo in Konkani and Uppilitta Manga in Malayalam.During Raw Mango season a large number of raw Mangoes are collected.They are washed thoroughly and pat dried with clean cloth and kept them in big Jars called Bharani.Then boiled and cooled Salt Water is poured into the jar/ Bharani to preserve the Raw Mangoes.This preserved raw Mangoes/ Salted raw Mangoes last for a very long time in Salt water in the jar/ Bharani. Always use clean and dry spoon to take out the Brined Raw Mangoes from the Jar/Bharani.Otherwise fungus will enter into the Jar and decay the Brined Mangoes. We can make varieties of dishes with this brined raw mangoes.
The following ingredients are needed to prepare Brined Raw Mango Curry.
Ingredients:-
Brined Raw Mango. -2 medium size.
Salt. -to taste.
For grinding Masala paste:-
Coconut grated. -1 cup
Turmeric powder. -1/4 tsp
Green chillies. -5
Cumin seeds/ Jeera. -1 tsp
Shallots. -4 roughly chopped
Curry leaves. -1 spring
Brined raw Mango. -1small finely chopped
For Seasoning:-
Coconut oil/ Oil. -1tbsp
Mustard seeds. -1tsp
Dry Red chillies. -2
Curry leaves. -1;spring
Shallots. -8 small( finely chopped thin roundels)
Instructions:-
Wash 2 medium size Brined raw Mangoes in water. Chop them into small pieces along with skin and tender seeds and keep them in a cooking vessel.( If the seeds of the Brined mangoes are hard, then slice the sides of the brined Mangoes into small pieces and keep the chopped Mango pieces along with hard seeds in a cooking vessel.
Peel the Shallots. Roughly chop 4 shallots for grinding and finely chop 8 Shallots into thin roundels for seasoning and keep aside.
Wash and slit Green chillies and keep aside.
Broke 2 dry Red Chillies into 2 halves and keep aside.
Method:-
In a cooking vessel boil 2 cups of Water.Add the chopped Brined Mango pieces.Add the hard seeds of the brined mangoes if any. Add 1tsp Salt.Boil and cook till the brined mango pieces become soft.
Grind the grated Coconut, Cumin seeds/Jeera, slited Green Chillies, Curry leaves, roughly chopped shallots, finely chopped brined raw mango pieces along with Turmeric powder to a smooth and fine paste.
Add the ground paste to the cooked Brined Mango pieces in the cooking vessel and mix well.Bring it to boil for a minute.
Add little Salt if required, as the brined raw mango has Salt in it and switch off the flame.
Heat Coconut.oil/ any cooking oil in a pan and splutter Mustard seeds and saute well.
Add broken dry Red chillies and Curry leaves and fry for a second.
Add the finely chopped thin roundels of Shallot and fry well till the shallots become translucent and little golden colour.
Pour this seasoning into the Curry in the cooking vessel.
A tasty, yummy, little tangy and delicious Brined Mango Curry/ Uppilitta Manga Curry/ Mitta Gallalo Ambo Ramdayi/ Uppumanga Curry is ready to serve with hot steaming Rice.
