Potato and Coriander leaves is a good combination which makes the stir fry more tasty and delicious.Coriander leaves have many health benefits.It improves Cholesterol level, controls blood pressure etc Potato stir fry goes well as a side dish with Rice,Chapathi, Bread, Phulkas etc.
The following ingredients are needed to prepare this delicious recipe.
Ingredients:-
Potato. -2 large
Salt. -to taste
Lemon juice. -1tsp
Coriander leaves. -1/4 cup finely chopped
For Seasoning :-
Coconut oil/Oil. - 2tbsp
Mustard seeds. -1/2tssp
Sesame seeds/Til -1tsp[white]
Curry leaves. -few
Hing powder. -1/2tsp
Turmeric powder. -1/4 tsp
Ginger paste. - 1 tsp
Green chilly paste. - 2tsp
Instructions:-
Wash and boil 2 large Potatoes.Peel the skin and chop into cubes.Keep aside.
Clean, wash and finely chop Coriander leaves along with stems and keep aside
Method,:-
Heat Oil in a pan and splutter Mustard seeds and saute well.
Add white Sesame seeds, few Curry leaves and Hing powder and saute well.
Add the boiled Potatoes,1/4tsp Turmeric powder, 1tsp Ginger paste, 2 tsp Green chilly paste.Mix well and cook on a medium flame for 2 minutes.Stir in between.
Add 1tsp Lemon juice and 1/4cup finely chopped Coriander leaves.Mix well and cook on medium flame for 2 minutes and switch off the flame.
Potato, Coriander leaves Stir fry is ready to serve hot with Rice, Chapathi or Phulkas.
