Curd Rice / Yogurt Rice.


Curd rice is a healthy and very popular south Indian dish made with cooked Rice and Curd.This delicious Rice is also called Yogurt Rice.The following ingredients are needed to prepare this delicious Curd Rice/Yogurt Rice..

Ingredients:-

Raw Rice.       -1cup
Oil.                  -2tsp
Urad dal.          -1tsp
Mustard seeds. -1tsp

Cumin seeds.    -1/2tsp
Red chilly.        -1
Ginger.              -a small piece
Green chilly.     -3
Curry leaves.     -1spring
Onion.                -1 medium size[optional]
Curd.                  -1 cup
Milk[boiled].      -1/4 cup


Instructions:-

Wash and pressure cook Raw Rice with required Water for 2 whisles or till mushy and keep aside.

Wash and half slit Green chillies lengthwise and keep aside.

Peel, wash and chop Ginger into small pieces and keep aside.

Broke the dry Red chillies into halves and keep aside.

Peel and finely chop Onion and keep aside.[optional]

Mix 1cup Curd with 1/4cup boiled and cooled Milk and keep aside.



Method:-

Heat Oil in a pan and add Urad dal and saute well till little golden.

Splutter Mustard seeds and Cumin seeds/Jeera and saute well.

Add broken Red chilly bits and saute well.

Add 1 small finely chopped Ginger piece and saute well.

Add half slit Green chillies and Curry leaves and saute well and fry in oil for a second.

Add finely chopped Onion pieces and saute well till the Onion become translucent.[optional]

Add the cooked Rice and mix well and switch off the flame.

When cooled add Curd & Milk mixture and mix well with the cooked Rice.Mix every thing well.

A tasty Curd Rice/ Yogurt Rice is ready to serve hot with Pickle and deep fried Papad.
