Ivy gourd Masala Curr is a semi thick gravy.Adding Kashmiri Chilli powder gives more colour and adding roasted Cococnut paste gives more thickness to the Ivy gourd Masala curry.This semi thick Masala curry can be served as a side dish with Rice or Chapathi.
The following ingredients are needed to prepare this semi thick masala curry.
Ingredients:-
Ivy gourd. -15 fresh and tender
Salt. -to taste
Onion. -2
Green chilly. -2
Tomato. -2
Coconut oil/ Oil. -2 tsp
Mustard seeds. -1 tsp
Cumin seeds/ Jeera. -1/2 tsp
Fennel seeds. -1/4 tsp
Ginger garlic paste. -1 tsp
Curry leaves. -1 spring
Coconut grated. -1/2 cup
Coriander leaves. - 2 spring
For Chilly paste:-
Kashmiri Red chilly powder.-1 or 2 tsp
Coriander powder. -1/2 tsp
Turmeric powder. -1/4 tsp
Garam Masala powder. -1 /4 tsp
Instructions:-
Wash Ivy gourd two three times in running Water and keep aside.
Remove both the edges of the Ivy gourds and chop them each into two halves lengthwise.
In a cooking vessel boil 1cup of Water and add the chopped Ivy gourd pieces and cook them till soft and keep aside.
In a small bowl add Coriander powder, Red chilly powder, Turmeric powder and Garam Masala powder and mix well adding 2tbsp Water and keep aside the Chilly paste mixture.
Wash and finely chop the Green chillies into thin roundels and keep aside.

Roast grated Coconut or desiccated Coconut adding little oil in a pan till golden brown and grind to a smooth paste and keep aside.

Method:-
Heat Coconut oil or any cooking oil in a pan and splutter Mustard seeds and saute well.
Add Cumin seeds and Fennel seeds and saute well.
Add finely chopped Green chilly roundels and Curry leaves and fry for a second.
Add Onion pieces and required Salt and saute well till the Onion becomes translucent.
Add Ginger Garlic paste and stir well till the raw smell goes off.
Add finely chopped Tomato pieces and saute well and cook till the Tomatoes become mushy.
Add the Chilly paste mixture from the bowl and mix well.
Add the boiled and cooked Ivy gourd pieces and mix well with the Chilly paste.
Add the ground Coconut Paste and mix everything well.Spinkle little Water and cook on low flame for a minute and switch off the flame.
Lastly add the finely chopped Coriander leaves and mix well.
The consistency of the Ivy gourd Masala Curry is semi thick.Add Water according to the consistency of the curry.
A tasty ,yummy , delicious Ivy gourd semi thick masala curry is ready to serve as a side dish with Chapathi, Phulka, Roti , Dosa, Idli or Rice.
