Patholi- Haldi Panna Patholi -Konkani recipe /Rice flour Patholi in Turmeric leaves.

Patholi is a sweet dish.Turmeric leaves are called Haldi Paan in Konkani.Haldi Panna Patholi is a Konkani style sweet dish steam cooked in Turmeric leaves.Patholi is made with Rice flour dough spread in Turmeric leaves and stuffed with Jaggery & Coconut mxturre and then steam cooked.This healthy and sweet dish is served with ghee as an evening snack.

The following ingredients are needed to prepare this delicious Patholi.

Ingredients:-

Rice flour.          -2 cup
Salt.                   -to taste

Oil/Ghee.            -as required
Tumeric leaves. - 2 big

For filling the sweet mixture:-

Coconut grated.       -1 cup
Jaggery grated         -1 cup
Cardamom powder. -1 tsp

Instructions:-

1.  Take 2 Turmeric leaves and sprinkle little water on it and wipe with a clean cloth.

2.  Chop the Turmeric leaves into small square or triangular pieces and keep aside.

3.  In a small bowl add freshly grated Coconut and grated Jaggery. Mix them with your hands very well until combined. Add Cardamom powder and mix again to make the filling soft and keep aside.

Method:-

1.  In a wide mixing bowl add 2 cup of Rice flour.Add little Oil and Salt and mix well.

2.  Boil 2 cup of Water in a vessel and switch off the flame.

3.  Add the required boiling Water into the Rice flour slowly and little by little and mix well using a spoon.

4.  When little cooled, mix the Rice dough well with your hands without any lumps and knead well to make a soft dough.

5.  Keep the chopped Turmeric leaves on a large plate or on a clean kitchen platform and spread oil over each leaf pieces with your fingers.

6.  Apply little ghee or oil on your hands and pick a small ball size of Rice dough.

7.  Place the Rice dough ball on each Turmeric leaf pieces and then flatern it thinly and evenly on  each leaf pieces with your fingers lengthwise.

8.  Apply little ghee or oil on your hands each time ,so the Rice dough will not stick on your fingers.

9.  Take a spoon full of the filling( Coconut+ Jaggery mixture) and place it in the centre of the flattern dough on the leaf pieces lengthwise.

10.  Fold the Turmeric leaf pieces filled with flattern Rice dough and the Coconut mixture on one side.

11.  Place the folded Turmeric leaf pieces carefully into the steamer and steam cook the Patholi for about 10 to 12 minutes.

12.  Then remove the lid of the steamer and take out the steamed Patholi
.

13.  Transfer the steamed Patholi to a plate and when cooled remove the wrapped Turmeric leaf pieces from the steamed Patholi. 

14.  A very tasty, soft, delicious and sweet Patholi/ Haldi Panna Patholi/ Rice flour Patholi filled with Coconut & Jaggery mixture is ready to serve with ghee as an evening snack.

15.  Serve the Patholi hot to get the real taste.
