Ash gourd is called Kuvale in Konkani.Kuvale & Tomato Sassam is a Konkani dish. No Seasoning in this recipe. This dish is a Coconut based Masala curry adding crushed raw Mustard seeds in grinding the Masala. The recipe is very simple, quick and easy to make with few ingredients.
The following ingredients are needed to prepare this Kuvale Tomato Sassam.
Ingredients:-
Ash gourd. -a small
Tomato. -2 medium size
Curry leaves. -1spring
Salt. - to taste
For grinding the Coconut Masala paste:-
Coconut grated. -1 cup
Dry Red chillies -5 or Green chillies. -4
Turmeric powder. -1/4 tsp
Mustard seeds. -1 tsp
Instruction:-
The following ingredients are needed to prepare this Kuvale Tomato Sassam.

For grinding the Coconut Masala paste:-
Coconut grated. -1 cup
Dry Red chillies -5 or Green chillies. -4
Turmeric powder. -1/4 tsp
Mustard seeds. -1 tsp
Instruction:-
Peel and remove the outer skin and chop a small Ash gourd/Kuvale into thin lengthy pieces [about 1 cup]. Keep aside.
Wash and chop 2 Tomatoes into lengthy pieces and keep aside.
Crush 1tsp raw Mustard seeds with mortar and pestle and keep aside.
Grind freshly grated Coconut,dry Red chillies or Green chilies,Turmeric powder and crushed Mustard seeds to a smooth paste.Keep aside.
Method:-
In a cooking vessel add Ash gourd pieces, chopped Tomatoes and required water.Boil and cook till soft and well cooked.
When cooked add required Salt and mix well. Boil for 2 minutes on low flame.
Add the ground Coconut Masala paste and mix well with the cooked Ash gourd pieces and Tomatoes pieces and boil for 2 minutes.
Add 1spring fresh Curry leaves and mix well and switch off the flame.
A tasty Ash Gaurd &Tomato Sassam is ready to serve with Rice and other side dishes
