The following ingredients are needed to prepare this Rice Moong dal Pongal.
Ingredients:-
Rice. -1 cup
Split Moong dal. -1/2 cup
Cashew nuts. -10
Cumin seeds. -1tsp
Black Pepper. -1/2tsp whole
Ginger. -1/2 tsp chopped
Hing powder. - a pinch
Turmeric Powder -a pinch
Instructions:-
Dry roast split yellow Moong dal till nice aroma comes and keep aside.
Wash and pressure cook Rice and roasted yelow split Moong dal with 2 cup of Water and little Salt for 2 whistle or till soft.The Rice should be well cooked.Keep aside.
Method:-
Heat 1tbsp Ghee in a pan and fry 10 Cashew nuts till golden colour and keep aside for garnishing.
In the same pan add Cumin seeds and whole Black Pepper corn and allow them to splutter.
Add few Curry leaves and fry in oil till crispy.
Add chopped Ginger and stir well
Add a pinch of Turmeric powder and a pinch of Hing powder and saute well.
Add the cooked Rice and Moong dal into the pan and mix well.
Check Salt and stir well.
Simmer for few minutes and allow the Rice to get dry and switch off the flame.
Add 1/2 tsp Ghee and mix everything together and close the pan with a lid till ready to serve.
Garnish with fried Cashew nuts.
A very yummy Moong dal Rice is ready to serve with spicy Pickle.
