Ambya Pulchikery- konkani style.(Raw Mango Pulissery)



Ambya Pulchikery is a curd based Kochi GSB style Raw Mango curry goes well with Rice.

The following ingredients are needed to prepare Raw Mango Pulissery /Ambya Pulchikery.

Ingredients:-

Raw Mango.   - a small matured and firm
Green chillies. -3

Curd.                -1cup
Salt.                 -to taste

For grinding Coconut Masala paste:-

Coconut grated.   -1 cup
Dry Red chillies.  -5
Turmeric powder. -1/4 tsp

For Seasoning:-

Coconut oil.                  -1tsp
Mustard seeds.              -1 tsp
Dry Red chillies.           - 2
Fenugreek/Methi seeds.- 1/4 tsp
Curry leaves.                 -1 spring

Instructions:-

Wash and chop a small and matured raw Mango into small cubes along with skin. Apply little Salt and keep aside for 5 minutes..

Grind freshly grated Coconut, dry Red chillies and Turmeric powder to a smooth paste adding very little water and keep aside.

Wash and  half slit Green chillies  lengthwise and keep aside. 

Whisk the Curd adding little water and keep aside.

Broke dry Red chillies into halve and keep aside.

Method:-

In a cooking vessel add the chopped raw Mango pieces, 3 half slit Green chillies and 2 cup of water. Boil and cook till the raw Mango pieces become soft. [Salt is already applied on the raw Mango pieces.]

Add the ground Coconut Masala paste.Mix well and boil for 2 minutes on low flame.

Add whisked Curd. Mix well and boil.When boiling bubbles starts to appear on the sides,switch off the flame.


Check for Salt and add little Salt if needed]

Heat Coconut oil in a small pan for seasoning. Splutter Mustard seeds and saute well.Add Fenugreek (Methi) seeds and fry in oil. Add 2 dry Red chillies broken into halves and fry in oil. Add Curry leaves and fry for a second.Switch off the flame. 


[Or you can make a seasoning of 1tsp Mustard seeds, 1/2 tsp Cumin seeds and few Curry leaves in 1 tsp Coconut oil.]

Pour the seasoning into the Curry in the cooking vessel.

A tasty Ambya Pulchikery/ Raw Mango Pulissery is ready to serve with Rice.
