Ripe Jack fruit Bulb Sweet Dish - Konkani recipe/ Ponsa Ghoro Godu Humman

Jackfruit bulb is called Ponsa Ghoro in Konkani.Ripe Jack fruit bulb is widely used in Konkani cuisine for making konkani style sweet dishes like Kheer, Paayasam, Patholi, Ponsa Muliku, Ponsa Muddo and so many other variety of dishes.Ripe Jackfruit sweet dish is a  Konkani style sweet dish made with ripe Jackfruit bulbs and Jaggery.This sweet dish is served as aside dish with Rice.

The  following ingredients are needed to prepare this delicious Sweet dish.



Ingredients:-

Ripe Jackfruit bulb.  -10 or 12
Jaggery.                   - 1/2 cup grated
Black Pepper corn.  -2 tsp
Rice flour .                -2 tsp
Salt.                          -to taste



For Seasoning:-


Cooking oil.               -  tsp
Mustard seeds.         -1tsp
dry Red Chillies.        -2
Cumin seeds/ Jeera. -1/2 tsp
Curry leaves.             -1 spring




Instructions:-


1. Take a small portion of a ripe Jackfruit and seperate the Jackfruit bulb from it.






2. Half slit the Jackfruit bulb lengthwise and remove the seeds and keep aside the Jackfruit bulb.





3. Take a small ball of jaggery. Colour of the Jaggery may be brown or dark brown.Grate the Jaggery and keep aside.





4. In a small vessel add the grated Jaggery and 1/2 cup Water. Boil till the Jaggery melts and dissolves in Water.Filter the Jaggery solution and remove the impurities and keep aside.





5. Crush Black Pepper corns to a little coarse powder and keep aside.



6.  Keep aside the Seasoning items.

  In a mixing bowl add 2 tsp Rice flower and add little Water and mix well to make a paste.Keep aside.






Method:-


In a cooking vessel add 2 cup of Water and add the half slit Jackfruit bulbs without seeds and required Salt and boil and cook the Jackfruit bulb till soft.

When the Jack fruit bulbs become little soft add the melted Jaggery solution and mix well and cook till the Jaggery solution thickens.

When the Jaggery solution thickens add the Rice flour mixture from the bowl and mix well.Stir well and cook till the dish  littlethickens and Jaggery solution well coated with the cooked Jackfruit bulb.

Then switch off the flame.

Heat cooking oil in a pan and splutter Mustard seeds and Cumin seeds and saute well.

Add dry Red chillies broken into halves  and Curry leaves and fry for a second.

Add the crushed Black pepper and fry well and switch off the flame

Add this Seasoning into the sweet dish in the cooking vessel.






A tasty, yummy and delicious ripe Jackfruit bulb sweet dish is ready to serve as a side dish with Rice.
