BREAD FRUIT STIR FRY /Jeeve Kadgi Upkari /Landae Gudugya Upkari-Konkani style

Bread fruit is called Landae Gudugo in Kochi Konkani.It is also called Jeeve Kadgi in Konkani.Bread fruit is rich in Vitamin and Minerals llike Iron, Calcium etc.When this fruit is cooked, the taste is similar to freshly baked bread.Bread fruit is widely used in Konkani cuisine for making varieties of dishes and used in curries and making fritters.Landae Guduga Upkari/ Jeeve Kadgi Upkari is a  Konkani style Bread fruit stir fry.

The following ingredients are needed to prepare this tasty Bread fruit Stir fry/ Landae Gudga Upkari.



Ingredients:-

Bread fruit.             -1small
Coconut oil.            -2tsp +1 tsp
Mustard seeds.      -1tsp
Red chilly powder. -1 tsp or dryRed chilly. -2 broken into halves
Hing powder.          -1/2 tsp[asafoietida]
Salt.                        -to taste

Instuctions:-

Wash, peel the skin and cut the tender Bread fruit length wise.Then chop them into thin vertical pieces.Keep them in water to avoid discolouration of the fruit.




Method:-

Heat Coconut oil/any cooking oil in a pan and splutter Mustard seeds.

Lower the flame and add Red chilly powder or add broken dry Red chilly and saute well and fry for a second.


Add Hing powder and saute well.

Discard the water and add the chopped thin lengthy pieces of Bread fruit and mix well.

Add required Salt and  sprinkle little Water and mix well.

Close the pan with a lid and cook the bread fruit till soft .Stir fry several times in between cooking.

Bread fruit cooks fast.When the Bread fruit pieces cooked soft switch off the flame.

Pour 1tsp Coconut oi lover the cooked Bread fruit pieces and stir well for a second.

A tasty Bread fruit Stir fry/ Landae Guduga Upkari is ready to serve as a side dish with steamed Rice.
